BAKED HALIBUT WITH CRISPY PANKO
This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

Steps:
- Preheat the oven to 400ºF. Line a baking sheet with parchment paper or foil. In a shallow bowl, mix together the panko bread crumbs, parmesan, parsley, dill, chives and lemon zest.
- Rinse halibut fillets and pat dry with a paper towel. Place fillets onto the prepared baking sheet and drizzle with olive oil (rubbing it into the front and back of the fillet), then dredge the fish into the bread crumb/parmesan cheese mixture, pressing it in lightly with your fingers.
- Place fillets back onto baking sheet and bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.
- Taste and season with salt and pepper, as needed. The parmesan cheese is salty, so I usually don't need additional salt.

HALIBUT PARMESAN
Steps:
- Put an oven rack in the center of the oven and preheat the oven to 450 degrees F.
- Pat the halibut dry with a paper towel. Spread the flour in 1 shallow dish, beat the egg with 2 tablespoons water in another, and put the Parmesan cheese in a third.
- Heat a medium oven-proof skillet over medium-high heat. Add the butter or oil and heat until hot but not smoking. Meanwhile, coat the halibut with flour, shaking off the excess; repeat with the egg mixture and Parmesan. Add the fish to the pan and cook until golden on both sides, 1 to 2 minutes per side. Transfer the skillet to the oven and cook until slightly crispy, 4 to 5 minutes. Serve hot.

PANKO FRIED HALIBUT CHEEKS
Halibut cheeks are truly tender, flavorful morsels. I don't like to use too many herbs or spices with them just let the natural flavor come through. You could add some garlic to the pan or mix in some fresh dill - it's up to you. This is how I enjoy them served with some Tartar sauce & an additional wedge of lemon. You may substitute regular bread crumbs but Panko are better

Tips:
- Choose the right halibut. Look for firm, white flesh with no brown spots or discoloration.
- Make sure your panko breadcrumbs are fresh. Stale breadcrumbs will not adhere to the halibut and will not provide a crispy crust.
- Use a good quality Parmesan cheese. Freshly grated Parmesan cheese will provide the best flavor.
- Don't overcrowd the pan when frying the halibut. This will cause the fish to steam instead of fry and will result in a soggy crust.
- Serve the halibut immediately after cooking. This will ensure that the fish is hot and crispy.
Conclusion:
This panko parmesan halibut recipe is a delicious and easy way to prepare this versatile fish. The crispy panko crust and flavorful Parmesan cheese make this dish a hit with everyone who tries it. Serve it with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
