Tender, juicy pork chops with a crisp panko breading.

Provided by Laureen King

Categories     Dinner

Time 40m

Number Of Ingredients 11

4 pork chops (thick cut 3/4 to 1 inch)
1 cup panko bread crumbs
1/2 cup all purpose flour
2 eggs
4 tablespoons milk
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
olive oil for frying

Steps:

  • Preheat oven to 350 degrees F.
  • Line baking sheet with parchment paper. This will help prevent the breading from sticking to the baking sheet.
  • Set up 3 stations, I use pie plates for this.
  • Station 1 - all purpose flour
  • Station 2- mix together eggs and milk
  • Station 3 - mix together panko bread crumbs, paprika, garlic powder, thyme, salt & pepper
  • Dust pork chops with flour, shake off excess.
  • Immediately dip into egg mixture.
  • Next press into bread crumb mixture ensuring a good coating of bread crumbs.
  • Heat olive oil to large frying pan.
  • Brown the pork chops on medium heat just until golden brown on each side.
  • Transfer to baking pan to finish cooking in the oven for thicker cut pork chops.
  • Bake at 350º for 20-30 minutes until internal temperature reaches 145 degrees.
  • If using thinner cut pork chops you can skip baking in the oven and just use the stovetop.

Time 27m

Yield 4 servings

Number Of Ingredients 7

Lemon wedges, for serving

CRISPY PORK CHOPS WITH BUTTERED RADISHES

Crispy Pork Chops With Buttered Radishes image

These crisp, panko-crusted cutlets are your weeknight answer to tonkatsu or Milanese with a simplified, one-step breading procedure, no eggs or flour required. Thin pork chops, either bone-in or boneless, are seasoned with salt and pepper, then simply pressed into panko bread crumbs before crisping up in a hot, oiled skillet. While any quick-cooking vegetable could be tossed in the brown butter and spooned over the chops, radishes are especially nice for the way they keep their bite even after a trip to the skillet. Whatever you do, don't forget the lemon.

Time 20m

Yield 2 servings

Number Of Ingredients 9

2 bone-in or boneless pork chops (rib or loin), cut 1/2-inch thick (about 6 ounces each)
Kosher salt and black pepper
1 1/2 cups panko or fresh coarse bread crumbs
3 tablespoons canola oil, plus more as needed
4 tablespoons unsalted butter
2 tablespoons capers
1 bunch radishes, with tops on if you like, cut into quarters
Flaky sea salt
1 lemon, cut into wedges

Steps:

  • Season pork with salt and pepper. Place panko in a rimmed baking sheet or baking dish and season it with salt and pepper. Working one at a time, firmly press both sides of each pork chop into the seasoned panko until the chops are evenly and well coated.
  • Heat oil in a large skillet (10 to 12 inches) over medium-high heat; it should evenly coat the bottom of the skillet. If it doesn't, add a bit more oil. Place the pork chops in the skillet and cook until deeply golden brown, like the color of a well-baked croissant, 3 to 4 minutes.
  • Using tongs or a spatula, flip pork and continue to cook until well browned on the other side, too, another 2 to 3 minutes. Transfer pork to a plate, platter or cutting board lined with paper towel and season with salt.
  • Wipe out skillet and return to the stove over medium-high heat. Add butter, letting it sizzle, brown and foam. Add capers and half of the radishes, seasoning them with salt and pepper. Toss a few times, just to wilt the radish greens, if they're still on, and to evenly coat the radishes with the brown butter and capers.
  • Divide pork chops among plates and nestle butter-tossed radishes and capers alongside, plus remaining raw radishes. Sprinkle with a bit of flaky salt and serve with lemon wedges alongside for squeezing over.

PANKO FRIED PORK CHOPS WITH TEXAS TOAST

Panko Fried Pork Chops with Texas Toast image

I absolutely love the fried pork chop from Bertha's Kitchen in Charleston. If you're ever in my neck of the woods, you've got to go there and try it! This sandwich is inspired by her fried pork chop, with my spin, of course. For that extra crunch, I coat the pork chops in panko breadcrumbs after they've had a dip in some seasoned buttermilk.

Time 35m

Yield 4 servings

Number Of Ingredients 16

Vegetable oil, for frying
Four 1/4- to 1/2-inch-thick bone-in pork chops (12 ounces to 1 pound)
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/2 cups all-purpose flour
1 large egg
1 cup whole buttermilk
2 tablespoons Dijon mustard
1 1/2 cups panko breadcrumbs
2 teaspoons Miss Brown's House Seasoning, recipe follows
8 slices Texas toast, buttered and griddled
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Pour the oil to a depth of 1 inch in a large cast-iron skillet with high sides. Heat the oil to 350 degrees F.

  • Dredge one pork chop in the flour. Dip in the eggs, then in the panko. Place on a wire rack and repeat the process with the remaining pork chops. Fry the pork chops, in batches, until golden brown and a meat thermometer inserted in the thickest portion registers 145 degrees F, 3 to 4 minutes. Serve hot with the Texas toast.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

AIR FRYER PANKO-CRUSTED PORK CHOPS

Air Fryer Panko-Crusted Pork Chops image

These pork chops, prepared in the air fryer, are enhanced by a simple brine. With just a few seasonings in the crust, the chops are tender and juicy, crispy, and just right! Of course you may add more seasonings, if you like, just be careful of hiding the flavor of a simply delicious chop. We enjoyed these pork chops with potatoes in a cheese sauce and oven-roasted asparagus.

Provided by Bibi

Time 2h30m

Yield 4

Number Of Ingredients 14

4 cups water, divided
2 tablespoons kosher salt
2 tablespoons white sugar
1 sprig fresh rosemary
1 large bay leaf
4 (6 ounce) pork chops, about 1/2-inch thick
1 large egg
1 cup panko bread crumbs
2 tablespoons freshly grated Parmesan cheese
1 teaspoon Italian seasoning blend
freshly ground black pepper, to taste
extra-virgin olive oil cooking spray
1 sprig of fresh parsley for garnish (optional)
1 sprig of rosemary for garnish (optional)

Steps:

  • Pour 1 cup water in a 4-cup microwave-safe measuring cup. Microwave until boiling, about 4 minutes. Stir in kosher salt and sugar, until dissolved. Add remaining 3 cups water to make a brine.
  • Place rosemary sprig and bay leaf in a 1-gallon zip-top bag. Carefully pour in brine and add pork chops. Seal the bag, removing as much air as possible, and refrigerate about 2 hours.
  • Remove chops from the brine and discard the brine. Pat chops dry with paper towels.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Break egg into a shallow bowl and beat lightly. Combine panko, grated Parmesan, Italian seasoning blend, and black pepper, and place on a plate or cutting board. Dip each pork chop in the egg, then coat all sides with the panko mixture. Spray both sides of the coated chops with extra-virgin olive oil.
  • Place chops in the air fryer in a single layer, with chops not touching, and air-fry for 7 to 8 minutes per side, for a total of 14 to 16 minutes. An instant-read thermometer inserted into the center of the chops should read 145 degrees F (63 degrees C).
  • Serve warm, garnished with parsley and additional rosemary sprigs, if desired.

Tips:

  • To achieve a crispy crust, ensure the panko breadcrumbs are evenly coated onto the pork chops.
  • Enhance the flavor by using a flavorful breadcrumb mixture, such as seasoned panko breadcrumbs or a combination of panko and crushed crackers.
  • Before frying, allow the coated pork chops to rest for a few minutes, allowing the breadcrumb coating to adhere better.
  • Use a heavy-bottomed skillet or pan to maintain even heat and prevent burning.
  • Avoid overcrowding the pan to ensure proper browning and crispiness.
  • Flip the pork chops only once during cooking to prevent them from breaking apart.
  • To check doneness, insert a meat thermometer into the thickest part of the pork chop; it should read 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • Serve the panko-crusted pork chops immediately with your favorite sides, such as mashed potatoes, roasted vegetables, or a refreshing salad.

Conclusion:

Panko-crusted pork chops are an easy and delicious meal that can be enjoyed for lunch or dinner. With a crispy panko crust and juicy, tender pork, this dish is sure to be a hit. The versatility of panko breadcrumbs allows for various flavor combinations, making it a customizable recipe that can be tailored to your preferences.
