¼ teaspoon salt
1 cup uncooked grits (such as Bob's Red Mill®)
2 eggs
½ cup panko bread crumbs
⅓ cup butter

Steps:

  • Bring water and salt to a boil in a pot over high heat. Add grits and reduce heat to low. Cook slowly, stirring occasionally, until thickened, 5 to 15 minutes. Remove from heat, cover, and let stand for 3 to 4 minutes.
  • Pour grits into a greased loaf pan and let cool slightly, 10 to 15 minutes. Cover and refrigerate until firm, 1 hour to overnight.
  • Remove chilled grits from the pan and cut into 1/2-inch slices. Place beaten eggs into a shallow dish and panko bread crumbs in another; dip each slice of grits into eggs, followed by bread crumbs.
  • Heat butter in a frying pan over medium-high heat. Fry breaded grits slices in the hot butter until golden brown, about 5 minutes per side. Season with salt.

I love crunchy fries and love panko bread crumbs. So I came up with a idea for a coating for crispy crunchy fries today when I was working with panko breading. Ingredients can be mixed up with your favorite seasonings. Also can be deep fried as well as baked.

2 cups panko breadcrumbs
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon parmesan cheese
1 teaspoon johnny's seasoning salt
1 cup all-purpose flour
2 eggs, slightly beaten
1 tablespoon whipping cream or 1 tablespoon milk
1 large russet potato
oil, for frying (optional)

Steps:

  • Preheat oven or deep fryer to 350'.
  • Add flour onto wax paper or a bowl and set aside.
  • Combine in a bowl or pan, panko breadcrumbs,salt,pepper,parmesan cheese, and seasoning salt. Set aside.
  • Combine in another bowl or pan, eggs and whipping cream or milk. Set aside.
  • Cut potato into potato wedges or regular french fry shape. (I leave the potato peeling on).
  • Dip fries into flour then into egg mixture and then into breadcrumb mixture.
  • Place on a lightly greased baking sheet and baked for 30 minutes or until done.
  • Turn halfway through baking.
  • NOTE: If frying -- add coated fries to deep fryer and fry 10-15 minutes or until browned and tender.

⅓ cup panko bread crumbs
1 large egg, beaten
3 tablespoons chopped fresh parsley
2 tablespoons mayonnaise
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon yellow mustard
½ pound cooked lump crabmeat, drained
¼ cup panko bread crumbs, or as needed
2 tablespoons coconut oil
½ cup mayonnaise
1 canned chipotle pepper in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
1 tablespoon lemon juice

Steps:

  • Mix 1/3 cup panko, egg, parsley, mayonnaise, seafood seasoning, and mustard together in a medium bowl. Gently fold in crabmeat. Form into 4 patties and coat with remaining panko.
  • Heat coconut oil in a nonstick skillet over medium-high heat. Fry patties until crispy, flipping once, about 12 minutes total.
  • While patties cook, prepare the sauce: Combine mayonnaise, chipotle pepper, adobo sauce, and lemon juice in the bowl of a food processor; process until smooth.

1 1/3 c quick grits
5 1/3 c boiling water
3 Tbsp butter
salt to taste
1 c andouille sausage, diced
1/2 c cheddar cheese, shredded
1/2 tsp black pepper
1 tsp garlic powder
2 green onions, chopped
1/4 c oil for frying
1 c flour
1 c italian bread crumbs
EGG WASH
1 egg
3/4 c milk
(use more as needed depending on the size of patty you make)

Steps:

  • 1. In one quart sauce pot bring water to rolling boil. Add butter and salt. Fold in grits and reduce heat to simmer. Cook until grits are tender stirring occasionally.
  • 2. When cooked remove from heat and stir in sausage, cheese, green onions, garlic powder and pepper.
  • 3. Pour hot grits into sheet pan with 1 inch lip. Smooth out to 3/4" thickness. Cool overnight in refrigerator.
  • 4. The next morning use a round cookie cutter to cut circles.
  • 5. Heat oil in large skillet over medium high heat.
  • 6. Prepare egg wash: Beat egg and milk together.
  • 7. Dip patties into egg wash then flour then egg wash then bread crumbs. Pan fry until golden.
  • 8. Drain on a paper towel lined plate.
