¾ cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
½ cup miniature chocolate chips, or more to taste

  • Whisk egg, butter, and vanilla extract into "soured" milk until well combined. Pour flour mixture into the wet ingredients and whisk until just combined. Fold in chocolate chips. Batter will be thick. Allow batter to rest for 5 minutes.
  • Heat a large skillet over medium-low heat, and coat with cooking spray.
  • Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface, 2 to 4 minutes. Flip pancake with a spatula, and cook until browned on the other side, 2 to 3 more minutes. Repeat with remaining batter. Serve immediately.

Tips:

  • Use fresh baking powder and baking soda. Old baking powder and baking soda can lose their potency, resulting in flat pancakes.
  • Do not overmix the batter. Overmixing can result in tough pancakes.
  • Let the batter rest for a few minutes before cooking. This allows the gluten in the flour to relax, resulting in lighter pancakes.
  • Use a hot griddle or skillet. A hot griddle or skillet will help the pancakes cook evenly and prevent them from sticking.
  • Do not overcrowd the griddle or skillet. Overcrowding can prevent the pancakes from cooking evenly.
  • Flip the pancakes only once. Flipping the pancakes too often can break them up.
  • Serve the pancakes immediately. Pancakes are best served hot and fresh.

Conclusion:

Making pancakes with mini chocolate chips is a relatively simple process that can be easily mastered with a little practice. By following the tips above, you can create delicious and fluffy pancakes that are perfect for any occasion. Whether you are serving them for breakfast, lunch, or dinner, these pancakes are sure to be a hit. So next time you are looking for a quick and easy meal, give this recipe a try.
