2 cups Fiber Oneā„¢ Complete pancake mix (from 28.3-oz box)
1 1/2 cups cold water
Powdered sugar, if desired
1 cup maple-flavored syrup

1/2 cup sugar, plus
2 tablespoons sugar, divided
2 tablespoons grated lemons, rind of
1 1/2 cups flour
1/2 teaspoon salt
8 eggs
3 cups milk
3 tablespoons butter, melted
flavored yogurt or your favorite syrup (optional)

Steps:

  • Mix the 1/2 cup sugar with the lemon peel, set aside.
  • Mix flour, salt, and remaining sugar.
  • Beat eggs, milk and butter; stir into dry ingredients.
  • Pour batter by 1/3 cupfulls on lightly greased hot griddle.
