Salt
Zest of 1 lemon, in large curls
4 garlic cloves, thickly sliced
A few thyme sprigs
All-purpose flour
3 tablespoons olive oil (or shallot oil from crispy shallots; see recipe)
2 tablespoons butter
1 large shallot, finely diced
2 to 3 tablespoons green peppercorns, rinsed if in brine or rehydrated if freeze-dried
1 cup rich veal or chicken stock
4 tablespoons crème fraîche
1 tablespoon brandy
2 tablespoons chopped parsley

Steps:

  • Put veal steaks on a platter and season on both sides with salt. Sprinkle with lemon zest, garlic and thyme sprigs and set aside for an hour (or refrigerate for up to 3 hours, then bring to room temperature). 1/2 cup soy sauce
1/4 ounce dried porcini mushrooms* (half of 1/2-ounce package)
1 tablespoon finely chopped fresh rosemary
2 teaspoons coarsely ground black pepper
1 tablespoon olive oil

Steps:

  • Place steaks and soy sauce in large resealable plastic bag. Seal bag, releasing excess air; turn to coat. Let steaks marinate at room temperature 2 hours, turning occasionally.
  • Process porcini mushrooms in spice mill to fine powder. Mix 1 1/2 tablespoons mushroom powder, rosemary, and pepper in small bowl (reserve any remaining powder for another use).

2 large red onions, large, peeled & cut into 1/2 slices, rings separated
1/2 teaspoon salt
3 (8 -10 ounce) boneless strip steaks
3 garlic cloves, minced
1/2 cup balsamic vinegar, plus
1 tablespoon balsamic vinegar
1 teaspoon fresh rosemary, minced
1 tablespoon light brown sugar
salt
pepper

Steps:

  • Heat 2 tablespoons of the oil in a large heavy skillet over medium heat.
  • Add onions & salt and cook, stirring often, until lightly browned, about 10 minutes. Transfer to a bowl. Wipe out skillet with paper towels.
  • Add remaining oil to skillet & adjust flame to medium high.

4 boneless strip steaks (8 to 10 ounces each, about 3/4 inch thick), fat trimmed, room temperature

4 teaspoons unsalted butter

Steps:

  • Heat a 14-inch skillet over high heat until very hot. Season steaks on both sides with salt and pepper. Add 1 teaspoon butter to one area of skillet, and immediately place a steak on top. 1 pound (about 4 1/2 cups) snap peas
2 tablespoons unsalted butter
2 shallots, halved and thinly sliced
3/4 cup homemade or low-sodium chicken stock
1/4 cup heavy cream
Kosher salt and freshly ground white pepper
4 halibut steaks, about 8 ounces each
1 tablespoon peanut oil
1/2 lemon

Steps:

  • Bring a large saucepan that is 2/3 full of salted water to a boil. Add the snap peas and cook until just tender, 3 to 4 minutes. Drain and immediately plunge the peas into cold water in order to halt the cooking. Cool, drain again and set the peas aside.
  • In a small saucepan, melt 1 tablespoon of butter over medium heat and add the shallots. Cook, stirring, until the shallots soften, about 3 minutes. Remove from heat and transfer shallots to the container of a blender. Add the stock, cream and 1/2 of the cooked peas and process until very smooth, about 2 to 3 minutes. Pass the mixture through a fine-mesh sieve, pressing to push as much of the solids through the sieve as possible. Return the sauce to the pan and then set aside.
  • Season the halibut with salt and pepper. Place a nonstick skillet large enough to hold the halibut in a single layer over high heat. Add the oil. When very hot, add the halibut fillets and cook, turning once, until they are just opaque in the middle, about 10 minutes. (Lower the heat if they seem to cook too quickly.)
  • While the fish is cooking, melt the remaining tablespoon of butter in a small skillet set over medium heat and add the remaining snap peas. Cook, tossing, until just warmed through. Canola oil
Kosher salt and cracked black pepper
2 shallots, thinly sliced
1 clove garlic, minced
1/2 cup low-sodium beef broth
2 tablespoons Worcestershire sauce
2 tablespoons sherry vinegar
2 tablespoons unsalted butter
1/4 cup sliced Spanish olives (optional)
1 tablespoon chopped fresh chives

  • Heat a 12-inch cast-iron skillet over high heat until very hot, about 3 minutes. Meanwhile, thoroughly pat the steaks dry with paper towels. Lightly coat each side of the steaks with canola oil and sprinkle generously with salt and pepper.

Turn off the heat and whisk in the butter until it has melted and the sauce has thickened. Stir in the olives, if using.
