PAN-SEARED & ROASTED FILET MIGNON
This recipe is adapted from several roasted steak recipes with a few modifications that I feel makes the ultimate steak.

Steps:
- Preheat oven to 500 degrees.
- Let steaks warm to room temperature and rub with water on each side. Apply kosher salt, garlic salt, meat tenderizer, and fresh ground pepper liberally. Sprinkle paprika and parsley on each side for color/garnish.
- Warm olive oil in a grill pan, frying pan, or skillet over medium high heat and add filets while pan is warming. As steaks begin to sizzle, adjust temperature to high heat, gently lift the steaks to prevent sticking and apply pressure to ensure steaks are browning. Repeat process and adjust heat as necessary until steaks are brown (roughly 2 to 3 minutes on each side).
- Upon browning both sides, place steak in an oven safe pan or skillet and roast using the following temperature guidelines (which vary depending upon the thickness of the meat) - rotate halfway through cooking:.
- Rare - 4 to 6 minutes (130 to 140 degrees internal temperature).
- Medium Rare - 6 to 8 minutes (140 to 150 degrees internal temperature).
- Medium - 8 to 10 minutes (150 to 160 degrees internal temperature).
- Use a foil tent as necessary to keep steaks warm until serving. Remember they will continue to cook as they are removed from the heat. I prefer to serve with mashed potatoes and stir fried green beans or sauteed mushrooms.
- The following guidelines help to determine steak temperature without cutting into the steak and ruining the presentation according to Big Oven: very rare feels soft and squishy, rare is soft to the touch, medium-rare yields gently to the touch, while medium yields only slightly to the touch and is beginning to firm up, and medium-well is firm to the touch.
- Safety note per Big Oven: "Doneness" is an issue of personal preference. However, it is recommended that beef be cooked to medium-rare doneness, the internal temperature should reach 145 degrees F to ensure that harmful bacteria have been destroyed. A thick cut of beef that has been cooked to an internal temperature of 140 degrees F, may be removed from the oven, loosely covered, and allowed to rest a few minutes. The temperature will continue to rise about 5 degrees F, reaching proper doneness.
PAN-SEARED FILET MIGNON WITH ROASTED POTATOES AND MERLOT SAUCE
Steps:
- Make garnish:
- In a medium saucepan of salted boiling water blanch onions 3 minutes, or until barely tender, and drain in a colander. Peel skin away from each onion, keeping it attached at root end, and pat onion dry. In a heavy saucepan heat 2 cups oil until a deep-fat thermometer registers 375°F. and fry onions in 2 batches until crisp and brown, about 1 minute. Transfer onions as fried with a slotted spoon to paper towels and drain. Season onions with salt and pepper and cool. Onions may be made 8 hours ahead and kept, covered, at room temperature.
- Preheat oven to 425°F. and oil 2 baking sheets.
- Cut potatoes lengthwise into 1/2-inch-thick slices and arrange in one layer on baking sheets. Lightly brush slices with some oil and season with salt and pepper. Roast potatoes in middle and lower thirds of oven until golden brown and tender, about 35 minutes, and keep warm.
- Pat filets mignons dry and season with salt and pepper. In a large heavy skillet heat 2 tablespoons oil over moderately high heat until hot but not smoking and brown filets on both sides, without crowding, about 5 minutes total. Transfer filets to a shallow baking pan and roast in middle of oven about 10 minutes for medium-rare.
- On each of 6 plates fan 3 potato slices and top with a filet. Drizzle filets with some sauce and garnish with onions. Serve remaining sauce on the side.
PAN-SEARED FILET MIGNON WITH RED BELL PEPPER, TOMATO, AND BASIL SAUCE

Steps:
- Preheat broiler. Brush large baking sheet with oil. Place tomatoes and bell peppers, cut side down, on prepared sheet. Broil until tomatoes and peppers begin to char and blister, about 5 minutes. Cool. Peel skins from 1 pepper half, then cut into thin strips; set aside. Chop tomatoes and remaining peppers (do not peel).
- Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add shallots and sauté until tender, about 4 minutes. Add broth and wine; bring to boil. Add chopped tomatoes, chopped bell peppers, 1/2 cup basil, and crushed red pepper. Boil mixture gently until reduced to 2 cups, stirring occasionally, about 15 minutes. Cool slightly. Puree mixture in blender until smooth. Pour into strainer set over bowl, pressing on solids to extract as much liquid as possible; set aside. (Sauce can be made 1 day ahead. Cover and chill.)
- Heat heavy large skillet (preferably cast iron) over high heat. Sprinkle steaks with salt and pepper. Working in batches, add steaks to hot dry skillet and cook about 4 minutes per side for medium-rare. Transfer to platter; cover to keep warm. Add 1/4 cup water to skillet; stir to scrape up browned bits. Add sauce to skillet; reduce heat and simmer until heated through, about 4 minutes. Remove from heat. Whisk in remaining 4 tablespoons butter, then remaining 1/4 cup basil. Season sauce with salt and pepper.
- Place 1 steak on each of 8 plates. Drizzle sauce over. Garnish steaks with reserved pepper strips and serve.
TEIXEIRA'S PAN-SEARED BACON WRAPPED FILET MIGNON
This is a basic recipe to make bacon wrapped fillet. The searing keeps the meat moist while baking. Note: I prefer a local uncured, applewood smoked bacon. Choose based on preference but try to select a more meaty cut if possible.

Yield 4-6 filets, 2-4 serving(s)
Number Of Ingredients 7
Steps:
- Preheat the oven to 375 degrees.
- Trim the perimeter of the fillets to remove the large segment of fat that's usually present. Be very careful not to remove any meat. When complete, the entire fillet should be considered edible without further trimming based on your (guest's) preference.
- Cut the fillets into small, round steaks 2-3" in diameter. Each fillet should yield 2 to 3 fillets.
- Add the butter to a 12", oven safe skillet and begin to melt over low heat.
- Tightly wrap each fillet with one slice of bacon, pinning the bacon to the fillet where the bacon overlaps itself with a single toothpick.
- Add a small dash of salt and pepper to taste on top of each fillet. Flip and repeat.
- Increase the heat under the skillet to medium and then add the fillets.
- Cook for two minutes to sear the meat. Flip the fillets and sear the other side for 1-2 minutes. If possible, very gently nudge the fillets against the edge of the pan just enough to make contact to help sear the bacon during this time. DO NOT squeeze the fillets!
- (Optional) Add just a few crumbles of blue cheese to the top of each steak. Don't overdo this; blue cheese is strong and not the centerpiece of this dish.
- Immediately remove the entire skillet and place it in the oven for 7-10 minutes. This can vary depending on the thickness of the steaks (assumes about 1") and wellness preference. I prefer to err on the side of rare for these small steaks. You can always heat them further.
- Remove the skillet from the oven and allow the fillets to sit for 2 minutes before you move them. This allows time for the juice to re-absorb.
- Gently remove the steaks from the skillet, and then the toothpicks from the steak. Serve immediately.
PAN SEARED FILET MIGNON WITH GARLIC & HERB BUTTER
Steps:
- For the herb butter:
- Soften the butter, stir in herbs and garlic until fully mixed.
- Spoon butter onto tin foil and reshape into a stick of butter, freeze.
- For the filets:
- Preheat oven to 425 F. Remove steak from refer 30 minutes before cooking. Season both sides with salt and pepper.
- Add plain butter to a cast iron skillet on high heat. Place the filets in pan and sear for 2 minutes on each side for a total of 4 minutes.
- Place skillet into the oven. For rare, bake 4-5", medium rare bake 5-6", medium 6-7"
- Check steak temperature with a thermometer. Rare 120 F, medium rare 130 F, medium 140 F, medium well 150 F, well 160 F.
- Remove from skillet and set on plate, cover with foil for 5" before serving.
- Top with slice of herb and garlic butter and serve.
Tips:
- Select high-quality filet mignon steaks, ideally USDA Prime or Choice grade, for the best flavor and tenderness.
- Bring the steaks to room temperature before cooking to ensure even cooking throughout.
- Pat the steaks dry with paper towels to remove excess moisture, which can prevent proper searing.
- Season the steaks generously with salt and pepper or your preferred seasonings. You can also add herbs like thyme or rosemary for extra flavor.
- Use a heavy-bottomed skillet or griddle to ensure even heat distribution and prevent hot spots. Cast iron is a great option for this purpose.
- Heat the skillet or griddle over medium-high heat until it is very hot, but not smoking. A hot cooking surface is essential for a good sear.
- Add a small amount of high-heat cooking oil, such as grapeseed or canola oil, to the skillet. Avoid using olive oil, as it has a low smoke point and can burn easily.
- Sear the steaks for 2-3 minutes per side, or until a nice crust has formed and the internal temperature reaches your desired doneness. Use a meat thermometer to check the internal temperature accurately.
- Let the steaks rest for a few minutes before serving to allow the juices to redistribute and the meat to finish cooking. This will result in a more tender and flavorful steak.
Conclusion:
Pan-searing filet mignon is a classic cooking technique that allows you to create a delicious and impressive meal at home. By following these tips and using high-quality ingredients, you can achieve perfectly seared and tender filet mignon steaks that are cooked to your liking. Whether you prefer your steak rare, medium-rare, or medium, this method will help you achieve the perfect sear and doneness.
