Number Of Ingredients 4

2 (6-8oz) filets of center-cut salmon
2 tsp. ghee
salt and pepper, to taste
2 tbsp. olive or avocado oil

Steps:

  • Preheat oven to 350. Heat a cast iron skillet (or oven safe skillet) over medium-high heat. Season the flesh side of the salmon with salt and pepper, to taste. Add olive oil to skillet. When the oil is hot, add salmon skin-side down. Sear until the skin is golden brown and crispy, about 4 minutes. Flip and top each salmon with 1 tsp. of the ghee. Transfer to oven and cook until desired doneness-- about 5 minutes for medium-rare and 9 minutes for fully cooked through. Let rest for 2 minutes and serve immediately with the squeeze of lemon or whatever sauce you are serving it with!

ROASTED SALMON WITH JALAPEñO, HONEY AND LIME

Roasted Salmon With Jalapeño, Honey and Lime image

This is speedy weeknight salmon with a kick, thanks to sliced jalapeño, which flavors the honey glaze and cooks alongside the salmon. The chiles caramelize as they roast, becoming spicy and sweet. If you want to reduce the heat slightly, use two jalapeños instead of three. Serve with steamed white or brown rice, spooning the extra glaze over the salmon and rice.

Time 25m

Yield 4 servings

Number Of Ingredients 10

1/4 cup honey
3 medium jalapeños, thinly sliced crosswise into rings
2 tablespoons apple cider vinegar or rice wine vinegar
1 tablespoon soy sauce or tamari
4 (6-ounce) skin-on salmon fillets, about 1-inch thick
Olive oil, for brushing
Kosher salt, to taste
1/2 lime, for serving
Chopped fresh cilantro, for serving (optional)
Steamed rice, for serving

Steps:

  • Heat the oven to 400 degrees. While the oven heats, combine the honey, jalapeños, vinegar and soy sauce in a small saucepan. Bring to a boil, then turn the heat to low and simmer for 10 minutes. Set aside.
  • Pat the salmon fillets dry using paper towels. Brush a 9-by-9-inch baking pan (or other similar-size baking pan or dish) with olive oil, then place the fillets in the pan, arranging them evenly without crowding. Brush the fillets generously with olive oil and sprinkle with salt. Pour the glaze and jalapeños over the salmon, spooning some of the glaze onto the fish as it collects in the bottom of the pan.
  • Roast the salmon for 6 minutes, then baste with the glaze. Return to the oven and roast until the salmon is cooked through but still slightly rare in the center, another 6 to 8 minutes.
  • Spoon the glaze in the pan over the salmon, then squeeze the lime over the salmon, and sprinkle with salt and cilantro, if using. Serve hot with rice on the side, pouring any glaze that remains in the pan over the rice.

Yield Makes 4 servings

Number Of Ingredients 7

1 bunch broccoli (about 1 1/2 pounds), cut into florets
4 tablespoons olive oil, divided
Kosher salt, freshly ground pepper
4 6-ounce skinless salmon fillets
1 jalapeño, thinly sliced into rings, seeds removed if desired
2 tablespoons unseasoned rice vinegar
2 tablespoons drained capers

Steps:

  • Preheat oven to 400°F. Toss broccoli and 2 tablespoons oil on a large rimmed baking sheet; season with salt and pepper. Roast broccoli, tossing occasionally, until crisp-tender, 12-15 minutes.
  • Rub salmon with 1 tablespoon oil; season with salt and pepper. Push broccoli to edges of baking sheet and place salmon in the center. Roast until salmon is opaque throughout and broccoli is tender, 10-15 minutes.
  • Meanwhile, combine jalapeño, vinegar, and a pinch of salt in small bowl and let sit until jalapeño is slightly softened, about 10 minutes. Mix in capers and remaining 1 tablespoon oil; season with salt and pepper.
  • Serve salmon and broccoli drizzled with chile-caper vinaigrette.

Tips:

  • Choose the right salmon. Look for wild-caught salmon that is sustainably sourced. Farmed salmon can be treated with antibiotics and other chemicals, so it's best to avoid it if possible.
  • Use fresh jalapeños. Fresh jalapeños will give your salmon a more vibrant flavor than dried or canned jalapeños.
  • Don't overcrowd the pan. When you're pan-roasting salmon, it's important to give it enough space so that it can cook evenly. If you overcrowd the pan, the salmon will steam instead of roasting.
  • Cook the salmon over medium heat. Medium heat will help to cook the salmon evenly without overcooking it.
  • Flip the salmon halfway through cooking. This will ensure that the salmon cooks evenly on both sides.
  • Serve the salmon immediately. Pan-roasted salmon is best served immediately, while it's still hot and flaky.

Conclusion:

Pan-roasted salmon with jalapeño is a delicious and easy-to-make dish that's perfect for a weeknight meal. The salmon is cooked in a flavorful mixture of olive oil, butter, garlic, and jalapeño peppers. It's then served with a tangy lemon-herb sauce. This dish is sure to please everyone at your table.
