2 cups all-purpose flour
¾ cup milk
4 teaspoons baking powder
½ teaspoon salt
1 tablespoon bacon grease
1 cup water
salt to taste
1 large watermelon, sliced into wedges

Steps:

  • Combine flour, milk, baking powder, and 1/2 teaspoon salt together in a bowl until dough is well mixed.
  • Melt bacon grease in a skillet over medium heat; add water and salt to taste.
  • Form dough into 2x3/4-inch rectangles. Place dough rectangles in the bacon grease mixture, leaving a small space between each. Cover skillet with a tight-fitting lid; steam and fry until dumplings are browned, 10 to 15 minutes. Serve dumplings with sliced watermelon.

WATERMELON
1 large watermelon rind, (peeled and cut into 1 -2 inch triangles, sticks or cubes)
4 Tbsp salt
water to cover
MILK AND EGG COATING
1 c milk
1 Tbsp flour
2 large eggs
FLOUR COATING
1 c four
salt and pepper to taste
BREAD CRUMB COATING
1 c bread crumbs, dry
OIL FOR FRYING
4 - 6 inches deep vegetable oil
DIPPING SAUCES
pasta sauce, salsa, sour cream, ranch dip, onion dip (your favorites)

Steps:

  • 1. Peel the watermelon, cut into triangles, sticks or cubes (small is better). Put in a bowl and cover with water. Sprinkle with salt. Refrigerate overnight.
  • 2. Drain and rinse the melon in a colander. Let drain.
  • 3. Beat together the milk and egg coating. Set aside.
  • 4. Mix together the flour coating. Set aside.
  • 5. Put the bread crumbs in a shallow bowl. Set aside.
  • 6. Heat the cooking oil, about 4 -6 inches deep in a sauce pan or deep fryer.
  • 7. Dip the melon rind into milk and egg mixture, then in the flour. Back into the milk, then into the bread crumbs.
  • 8. Fry in the oil about 2 minutes or until tender and golden brown. Remove from oil and place on paper towel lined dish. Taste... if it needs more salt and pepper, do so to taste. Serve hot.
  • 9. *** You can also sprinkle with garlic powder and parmesan cheese.

Tips:

  • Choose a ripe and flavorful watermelon. A ripe watermelon will have a deep red color and a sweet, juicy taste.
  • Cut the watermelon into 1-inch thick slices.
  • Remove the rind from the watermelon slices.
  • Heat a large skillet over medium-high heat.
