TUNA FISH PATTIES

Tuna Fish Patties image

This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

TUNA PATTIES

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Time 30m

Yield 6-8 patties, 3-4 serving(s)

Number Of Ingredients 6

2 (5 -6 ounce) cans tuna in water, well drained (NOT oil)
1 egg
1/2 cup breadcrumbs
1/4 cup onion, cut as small as preferred
salt & pepper
oil, & butter to cook in (optional)

Steps:

  • Mix all ingredients.
  • Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
  • Make into patties 1/2 inch thick.
  • Sprinkle both sides of patties with pepper, and pat it inches.
  • Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.

Tips for Perfect Pan-Fried Tuna Patties:

  • Choose Fresh, High-Quality Tuna: Opt for sushi-grade or sashimi-grade tuna for the best flavor and texture.
  • Properly Drain and Flake the Tuna: Ensure the tuna is thoroughly drained to prevent excess moisture in the patties.
  • Use Quality Breadcrumbs: Fresh, seasoned breadcrumbs help bind the patties and add flavor. Consider making your own from stale bread.
  • Add Aromatics and Herbs: Elevate the patties with aromatic vegetables like onions, garlic, and herbs such as parsley or cilantro.
  • Season Generously: Don't be shy with seasonings like salt, pepper, and paprika. A well-seasoned patty will be more flavorful.
  • Handle the Patties Gently: Avoid overworking the mixture, as this can result in tough patties. Handle them gently when forming and cooking.
  • Achieve a Golden Crust: Pan-fry the patties over medium heat until they develop a golden-brown crust, ensuring they are cooked through.
  • Serve with Delightful Sauces: Complement the patties with zesty sauces like tartar sauce, remoulade, or a simple lemon-herb sauce.
