Salt and pepper, (to season)
2 tablespoons olive oil
1 onion (yellow, white or brown), (sliced)
2 large garlic cloves, (minced)
7 ounces (200 grams) brown mushrooms (sliced)
3 tablespoons unsalted butter
3 tablespoons plain flour
2 1/2 cups beef broth (or stock)
2 teaspoons Worcestershire sauce
Salt and pepper (to taste)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper to your taste.
  • Heat a lightly oiled skillet or pan (or barbecue) on high heat until just beginning to smoke. Cook steaks for 3 minutes each side or until cooked to your liking. Rest for 5 minutes.

  • Add the steaks back into the gravy in the pan along with the juices on the plate OR serve steaks with the onion mushroom gravy on the side. Garnish with chopped thyme, parsley or rosemary if desired.

HAMBURGER STEAKS WITH ONION AND MUSHROOM GRAVY

Hamburger Steaks with Onion and Mushroom Gravy image

This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 17

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

ROUND STEAK AND GRAVY II

Super tender, use a thin cut of round steak for better flavor! Extremely tasty, as it makes its own gravy.

Provided by CAPKO

Number Of Ingredients 4

1 ½ pounds thin cut round steak
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed French onion soup

  • Preheat oven to 325 degrees F (165 degrees C).
  • Trim the fat from the steak, and cut into desired number of servings.
  • In a roasting pan over medium high heat, sear both sides of the steak, about 1 minute per side. Remove from heat.
  • Stir the cream of mushroom soup, French onion soup and water into the roaster. Bake in the preheated oven 2 1/2 hours.

Tips:

  • When choosing steaks, look for ones that are at least 1 inch thick and have good marbling. This will ensure that the steaks are juicy and flavorful.
  • To get a good sear on the steaks, make sure your pan is hot before adding the steaks. You should hear a sizzle when the steaks hit the pan.
  • Don't overcrowd the pan when cooking the steaks. This will prevent them from cooking evenly.
  • Cook the steaks to your desired doneness. For a medium-rare steak, cook for about 3-4 minutes per side. For a medium steak, cook for about 4-5 minutes per side. For a medium-well steak, cook for about 5-6 minutes per side.
  • Let the steaks rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the steaks, making them more tender and flavorful.
  • To make the mushroom gravy, use a variety of mushrooms for a more complex flavor. Some good options include cremini mushrooms, shiitake mushrooms, and oyster mushrooms.
  • Be patient when making the gravy. It takes time for the flavors to develop. Simmer the gravy for at least 15 minutes, or until it has thickened to your desired consistency.

Conclusion:

Pan-fried steak and mushroom gravy is a classic dish that is easy to make and always a crowd-pleaser. By following these tips, you can make a steak and mushroom gravy that is sure to impress your friends and family. So next time you're looking for a delicious and hearty meal, give this recipe a try.
