Pan-Fried Cucumber image

This is an extraordinary way of cooking cucumber, revealing an unexpected side to the vegetable. Although cooked in a wok, the cucumber pieces are colored by laying them more-or-less flat against the surface of the wok, a method known in Chinese as jian (pan-fry) rather than chao (stir-fry). Time 15m

Yield 2 serving(s)

Number Of Ingredients 8

1 cucumber
1 fresh red chile, seeded and finely chopped
2 teaspoons garlic, minced
1 1/2 teaspoons light soy sauce
1 teaspoon rice vinegar
chopped fresh sweet basil leaves (or purple perilla leaves)
1 teaspoon sesame oil
3 tablespoons peanut oil (for cooking)

Steps:

  • Cut the cucumber in half lengthwise and then, with the knife at an angle, cut each half into slanted, almost semicircular slices about 1/4 inch thick.
  • Heat the wok over a high flame until smoke rises, then add the oil and swirl around; add the cucumber and fry for a few minutes until the slices are tinged a little golden. Spread the slices out so they cover as much as possible of the bottom of the wok, turning from time to time.
  • Add the chili and garlic to the wok and stir-fry until fragrant, adding the soy sauce as you go; splash the vinegar around the side of the wok and mix well. Add the herbs and stir a few times; then, off the heat, stir in the sesame oil and serve.

Categories     Fish

Time 20m

Number Of Ingredients 9

4 bass fillets
salt and pepper
2 Tbsp olive oil
1 large cucumber peeled, seeded and chopped
2 tsp soy sauce
1 Tbsp rice vinegar
1 tsp sugar
2 scallions chopped
2 Tbsp cilantro chopped

Steps:

  • 1. Make the salsa: Mix the cucumber, soy sauce, rice vinegar, scallions, sugar and cilantro together and set in fridge for flavors to meld
  • 2. Season the fish fillets with salt and pepper. Place oil in skillet and fry the fish about 4 minutes each side depending on how thick they are.
  • 3. Serve with salsa

Tips:

  • Choose the right cucumbers: For pan-frying, it's best to use small, firm cucumbers like Kirby or Persian cucumbers. These varieties have a thin skin and fewer seeds, making them ideal for pan-frying.
  • Slice the cucumbers evenly: To ensure even cooking, slice the cucumbers into uniform pieces. This will help them cook evenly and prevent some pieces from becoming overcooked while others remain undercooked.
  • Use a well-seasoned pan: A well-seasoned pan will help prevent the cucumbers from sticking and burning. If you don't have a well-seasoned pan, you can use a non-stick skillet.
  • Don't overcrowd the pan: When pan-frying cucumbers, don't overcrowd the pan. This will prevent them from cooking evenly and becoming soggy.
  • Cook the cucumbers over medium heat: Cook the cucumbers over medium heat to allow them to cook evenly without burning. Adjust the heat as needed to prevent burning.
  • Flip the cucumbers halfway through cooking: To ensure even cooking, flip the cucumbers halfway through the cooking time. This will help them brown evenly on both sides.
  • Season the cucumbers to taste: Once the cucumbers are cooked, season them to taste with salt, pepper, and other desired seasonings. You can also add a squeeze of lemon juice or a drizzle of olive oil for extra flavor.

Conclusion:

Pan-fried cucumbers are a delicious and versatile dish that can be enjoyed as a side dish, appetizer, or even a main course. With a few simple tips, you can easily make perfect pan-fried cucumbers at home. Experiment with different seasonings and toppings to create your own unique variations of this classic dish.
