I pan-fry the chicken in a skillet, then prepare the sauce in the same skillet. You might get some blackened 'stuff' in the pasta sauce - I strain it first before serving.

4 boneless skinless chicken breast halves
1 teaspoon kosher salt, divided
1 teaspoon fresh ground black pepper, divided
1 tablespoon olive oil

Steps:

  • Pound the chicken breasts with a meat mallet or a rolling pin, to tenderize the meat and ensure uniform thickness.
  • Sprinkle salt and pepper on both sides of the chicken and let sit for 15 minutes or so.
  • Heat a skillet over med-high heat, and add olive oil.
  • When pan is sufficiently heated, sear chicken breasts over high heat.

Kosher salt and freshly ground pepper
1 teaspoon garlic powder
Soybean or canola oil, for frying
2 cups whole milk
3 large eggs
2 cups all-purpose flour

Steps:

  • In a bowl or resealable plastic bag, season the chicken with 1 tablespoon salt, 1/2 teaspoon pepper and the garlic powder. Cover or seal and refrigerate overnight or up to 24 hours.
  • Pour 1/2 to 1 inch of oil into a deep 12-inch cast-iron skillet and heat until a pinch of flour sizzles upon contact (about 360 degrees F). Set a wire rack on top of a rimmed baking sheet and set aside. In a bowl, whisk together the milk and eggs. Place the flour in a separate bowl. Dip the chicken in the egg wash, drain off the excess, then dredge in the flour, shaking off the excess.
  • Working in batches, place the chicken skin-side down in the skillet and fry for 3 minutes without moving. 1/2 lb round steak
1 cup flour
1 cup milk
1 egg, slightly beaten
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Heat 1/4 inch oil in heavy skillet on med-high heat.
  • Combine 1 cup milk with egg. Pour into a shallow pie pan.
  • Season 1 cup flour with garlic powder, salt and pepper. Sift together in another pie pan.
  • Tenderize the steak well and trim off excess fat.
  • Dip the meat into egg mixture, then dredge in the flour mixture. Press flour into the meat. Repeat for a crispier coating.
  • When oil is hot, fry meat for 9-12 minutes.
  • This allows additional tenderizing of the meat. When fried meat is golden brown, drain on paper towels.
  • FOR GRAVY:.
  • Pour off all but 4 Tbsp of the cooking oil from skillet.
  • Over medium heat, slowly stir in the flour, stirring constantly.
  • Combine milk and water. Slowly add to skillet; stirring constantly. Loosen bits from bottom of pan while stirring. This is where the flavor is.
  • Add salt and pepper to taste. Bring to a boil. When bubbling, lower heat and simmer for 5 minutes.
  • Serve this dish with Mashed Potatoes.

1 teaspoon hot sauce
1/2 teaspoon stir-fry seasoning mix
1/2 pound ground chicken
1 scallion, chopped
1 tablespoon stir-fry seasoning mix
1 (12-ounce) package round wonton wrappers
2 tablespoons vegetable oil

Steps:

  • For the dipping sauce: In a small bowl, stir together the ponzu, hot sauce and stir-fry seasoning.
  • For the wontons: In a bowl, add the chicken, scallions and stir-fry seasoning. Mix with a spoon until well combined.
  • Put a wonton wrapper onto your work surface. (Keep the wonton wrappers covered with a damp towel so they don't dry out.) Place 1 heaping teaspoon chicken mixture in the center of the wrapper. Coat the edges of the wrapper with a little water using your finger or a brush. Fold the circle to form a half moon, pressing out any air bubbles Set aside, covered with a damp towel, while you make the rest.
  • When you are ready to cook, place a large, nonstick skillet fitted with a lid over medium-high heat and add the vegetable oil. When the oil is hot, place the wontons in a single layer in the pan; they should be close together but not touching. Depending on the size of the skillet, you may need to cook the dumplings off in 2 or 3 batches. Cook, uncovered, until the bottoms are browned, about 4 minutes. 1/3 cup cornmeal, eyeball it
1 teaspoon sweet paprika

2 tablespoons water, 2 splashes
4 tablespoons vegetable oil
1 1/4 cups beef broth or stock

Steps:

  • Preheat large, heavy skillet over medium high heat.
  • Set steaks on to a waxed paper lined work surface and cover with another piece of waxed paper. Pound steaks to 1/4-inch thick. Pull steaks off work surface and set to the side. Line work surface with more waxed paper. Pour 1/2 cup flour into 2 piles on opposite sides of the work space. Add cornmeal, paprika, salt and pepper to 1 pile of flour. Beat eggs and water in a pie plate or shallow dish.
  • Cut steaks into 4 portions and coat in flour, eggs, then seasoned flour and cornmeal.
  • Add 2 tablespoons oil to hot pan and cook 2 steaks at a time. Brown steaks about 2 minutes per side, or until cooked and remove from the pan. Add 2 tablespoons more oil and repeat with remaining 2 steaks. Remove steaks to serving platter and pour off all but 2 to 3 tablespoons of drippings. Add 2 tablespoons flour to drippings and cook 2 minutes. Whisk in broth and season with salt and pepper. Whisk half and half or cream into gravy. When gravy bubbles, remove from heat.

1 frying chicken, about 4 1/2 pounds
1 quart buttermilk
2 cups flour
1 tablespoon paprika
1 tablespoon cayenne pepper
1 tablespoon dried ground oregano

1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoon salt
1 teaspoon ground black pepper
Oil for pan frying
1 cup hot milk
1 large bunch collard greens, about 2 pounds
3 tablespoons olive oil
2 tablespoons chopped garlic
1 cup water
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Cut chicken into quarters or eighths. Soak chicken, refrigerated, in buttermilk for several hours or overnight. In a large brown paper bag combine 1 cup of the flour with paprika, cayenne pepper, oregano, thyme, cumin, coriander, salt, and pepper. Toss the chicken in remaining cup of unseasoned flour, dip again in buttermilk, and then toss in the bag with the seasoned flour. Reserve 2 tablespoons of seasoned flour.
  • In a large cast iron skillet over medium heat, heat 1/2-inch oil to 245 degrees on a fryer thermometer. In batches, carefully add several pieces chicken and fry until golden brown on both sides, about 20 minutes. Cover chicken after turning. Check for doneness with a fork. Place cooked chicken in 325 degree oven to keep warm while finishing remaining chicken.
  • After all the chicken has been cooked, pour off all of the oil except 2 tablespoons to make the gravy. Add reserved 2 tablespoons seasoned flour to cooking oil and cook for 3 minutes until medium brown. Whisk hot milk into flour and cook for 2 minutes. Serve finished gravy with chicken. Serve with collard greens (see recipe below) and cornbread.
  • Clean collards by removing coarse, wilted outer leaves. Wash and drain. Chop collards into 2 inch pieces, removing bottom of stems first. In a large skillet over medium heat, heat oil. Add garlic and cook for 2 minutes. Add collards and saute for 2 to 3 minutes. Add water, salt, and pepper and cover. Cook until tender, about 6 minutes.

2 boneless skinless chicken breast halves
4 small slice prosciutto or 4 small smoked ham
2 ounces fresh mozzarella cheese, cut into 4 slices
8 basil leaves, plus
1/4 cup thinly sliced basil leaves
2 teaspoons olive oil
1/2 cup chicken broth
2 tablespoons honey mustard
1 garlic clove, minced

Steps:

  • Heat oven to 350°.
  • Cut each chicken breast in half crosswise to make 4 portions. Cut a slit into the sides of each portion. Insert a slice of prosciutto, a slice of cheese and 2 whole basil leaves into each slit. Secure well with a toothpick.
  • Heat the oil in a large non-stick skillet over medium-high heat until hot; add the chicken. Reduce heat to medium; cook, turning once, until chicken is browned, about 3 minutes per side.
  • Transfer chicken to a baking pan.
  • Bake until chicken is cooked through, about 15-18 minutes.

1/2 cup flour
4 tablespoons flour
1 teaspoon salt, plus more to taste

Steps:

  • Combine 1/2 C flour and 1 tsp salt, 1 tsp pepper and 1 tsp paprika on a plate.

2 tablespoons French Dijon mustard
6 garlic cloves, peeled & crushed
2 lemons, juice and rind of, unwaxed grated
2 -4 teaspoons smoked paprika
sea salt

4 tablespoons creme fraiche or 4 tablespoons sour cream
1 bunch cherry tomatoes, on the vine pre cooked by roasting them in a very hot oven until charred & just holding their shape

  • Grate the lemons and then squeeze them to extract the juice.
  • Mix the lemon rind, juice, mustard, crushed garlic, salt, pepper & smoke paprika together until well blended.
  • Coat the chicken breasts with the sauce - or even better, place ALL the ingredients including the chicken into a Zip Lock bag.

  • OVEN BAKED VERSION: Preheat oven to 200 C or 400 F; coat the oven proof pan with the olive oil and heat it up slightly beforehand.

½ red onion, diced
½ red bell pepper, diced
1 jalapeno pepper, diced
2 cloves garlic, diced

Steps:

1 lb chicken liver
2 cups buttermilk
1 teaspoon louisiana hot sauce
2 tablespoons Worcestershire sauce
1/2 cup cornflour
1/2 cup all-purpose flour
1 teaspoon fresh ground pepper
1 teaspoon Old Bay Seasoning
1 teaspoon creole seasoning
1/2 teaspoon cayenne pepper
1 cup peanut oil
1/4 cup mayonnaise
2/3 cup sour cream
2 tablespoons lemon juice
2 large garlic cloves, finely minced
1 teaspoon Old Bay Seasoning
2 teaspoons Worcestershire sauce

Steps:

  • Soak chicken livers in mixture of buttermilk, hot sauce, and worcestershire sauce for at LEAST 2 hours in the fridge.
  • For the sauce you want to mix mayo, sour cream, lemon juice, garlic, old bay seasoning and worcestershire sauce in a bowl until fully incorperated. You want to make it before you fry the livers to give the flavors time to mingle. Place in fridge until just about to serve.
  • In a bowl combined corn flour, all purpose flour, black pepper, cayenne pepper, old bay and creole seasoning.
  • Add your peanut oil to a large sauce pan. Make sure it's large enough to fit the livers, but leave enough room in between so they are not too crowded. Or you can do them in batches.
  • Roll the livers in the dry seasoned mixture and place in the hot pan. Try to keep the heat between Med-high to Med.
  • Cook about 8-10 minutes on each side. It depends on the size of the livers. Turn down the temp if they start getting too brown too fast.
  • If not sure on their being done, you can just brown them on each side and then pop them in a 350F for about 10 minutes.
  • Once done, serve immediately with a generous spoon full of dipping sauce.

2 pounds boneless, skinless chicken breasts and/or thighs

1/2 cup apple cider vinegar
1/4 cup honey
1 cup canned pineapple chunks plus 1/4 cup pineapple juice
3 tablespoons ketchup
2 tablespoons low-sodium soy sauce or tamari
2 teaspoons light brown sugar
1 large garlic clove, finely grated
1/2 medium onion, thinly sliced
1 medium green or red bell pepper, seeds and ribs removed, sliced into 1" pieces

Steps:

  • Whisk cornstarch, pepper, and 1 1/2 tsp. salt in a large bowl. Pat chicken dry and cut into 1" chunks. Add to cornstarch mixture and toss to coat.
  • Heat 2 Tbsp. oil in a large nonstick skillet over high. Add half of chicken and cook, turning occasionally, until chicken is cooked through and a light brown crust forms, about 5 minutes.
  • Meanwhile, stir vinegar, honey, pineapple juice, ketchup, soy sauce, brown sugar, garlic, and remaining 1/4 tsp. salt in a medium bowl.
  • Transfer cooked chicken to a plate or bowl. Heat remaining 2 Tbsp. oil in skillet and cook remaining chicken, turning occasionally, 3 minutes. Add onion and pepper and cook, stirring occasionally, until vegetables are softened and chicken is cooked through, about 2 minutes more.
