Number Of Ingredients 9

2 pkg red enchilada sauce
3 c water
12 oz tomato paste
1 garlic clove, minced
1/4 tsp salt
2 lb ground beef
flour tortillas
2 c shredded cheddar cheese
16 oz refried beans, warmed

Steps:

  • 1. preheat oven to 350 degrees
  • 2. In a saucepan combine first 6 ingredients and simmer according to pkg instructions. In a skillet brown the meat and drain off grease.
  • 3. In a greased 13x9 baking dish pour 1/3 cup of the sauce to cover the bottom. Put down a layer of tortillas tearing to fit in the dish and now layer half the meat, beans, cheese and sauce with tortillas. the top layer should be tortillas covered with sauce and cheese.
  • 4. Bake uncovered for 35-40 minutes; let stand 10 minutes prior to serving.
  • 5. FYI: To make it even easier I would just used canned enchilada sauce

Tips:

  • Choose the Right Tortillas: Use large, burrito-sized tortillas that are soft and flexible. This will make it easier to fold and roll the burritos without tearing.
  • Cook the Meat Thoroughly: Make sure the meat is cooked all the way through before adding it to the burritos. This will help prevent foodborne illness.
  • Don't Overfill the Burritos: Be careful not to overfill the burritos, or they will be difficult to fold and roll. It's better to make smaller burritos that are easy to eat.
  • Use a Variety of Toppings: Don't be afraid to experiment with different toppings. Some popular options include cheese, sour cream, guacamole, pico de gallo, and lettuce.
  • Fold and Roll the Burritos Tightly: Once you have added all of the toppings, fold and roll the burritos tightly. This will help keep the fillings inside and make them easier to eat.
