1 c original slaw dressing (Marzetti 15 oz. "refrigerated" brand)
4 c coleslaw mix (or fresh cabbage grated-6 cups)
2 c angel hair cole slaw (finely shredded green cabbage)
1/2 c matchstick carrots (store brand)
1 can(s) crushed pineapple, drained; 8 oz.
1-1/2 c granny smith apples, chopped
1/2 c grapes, seedless, chopped
1/2 c nuts (walnuts), chopped
1/2 c raisins
1/4 c coconut, flaked

Had a partial head of cabbage from the garden and a Honeycrisp apple that needed to be eaten or used. So I threw things together and Hubby and I had some slaw for a dinner side dish.

1/4 solid medium head of cabbage, grated on large holes of box grater about 2 to 3 cups
1/2 to 1 medium honeycrisp apple, seeded and grated on large holes of box grater. about 1 cup
1/4 to 1/3 c raisins (softened in warm water and drained, if desired) i like them chewy.
1/4 to 1/3 c dried mixed fruit bits ( chop to 1/2 inch or less)
2 to 4 tsp fresh lemon juice
1 to 2 Tbsp white wine vinegar
1 to 2 Tbsp sugar cinnamon mixture ( 3 tbsp sugar to 1 tbsp cinnamon mixed)
1/4 to 1/3 c mayonnaise
1 to 2 pinch salt to taste
1/4 c cool whip or sweetened whipped cream

Steps:

  • 1. Shred cabbage and apple, place in sm/med mixing bowl. Add raisins and fruit bits and stir.
  • 2. In a small bowl, mix 1/4 c. mayonnaise, 2 tsp lemon juice, 1 Tbsp. vinegar, 1 Tbsp cinn/sugar and a pinch or two of salt together. Add to cabbage mixture and stir well. Taste and adjust the sweet and sour flavors to your liking. Add more mayo or vinegar if slaw needs more dressing. Remember that you will fold in sweetened whip cream or CoolWhip to finish.
  • 3. Fold in CoolWhip or whipped cream and serve.
