1 pound lean ground beef
1 small yellow onion
1 package taco seasoning mix
1 can (15 ounces) whole kernel corn, undrained
1 can (15 ounces) beans in chili sauce, undrained
1 can Rotel chilis and diced tomatoes, undrained
1 can tomato soup
1 soup can of water
(I also added 1 package of Dry Ranch dressing mix, although it was not called for in the original recipe. Adds more flavor!)

Steps:

  • Place burger and chopped onion to Deep Covered Baker. Cover and microwave on high for 4 minutes. Remove and crumble. Cover and return to microwave for 2 minutes. Remove and use Mix n Chop till desired consistency is obtained. Drain. Add remaining ingredients, stir thoroughly and heat 10 minutes until hot. Serve with tortilla chips, salsa, sour cream, and grated cheddar cheese.

I attended a Pampered Chef party and had this taco ring. I had ate them many times but was always to scared to make one. It's so easy--took me a few times to make it look pretty but it's really simple to do, just experiment around with it. My kids now request these instead of regular tacos. I was out of black olives tonight, so I used green--the toppings are your personal choice really! Makes 16 rolls but we can't eat just one!

1 lb lean ground beef
1 (1 1/4 ounce) package taco seasoning mix
1 cup shredded cheddar cheese (4 ounces)
2 tablespoons water
2 (8 ounce) packages refrigerated crescent dinner rolls
1 medium bell pepper
1 cup salsa
3 cups lettuce, shredded
1 medium tomatoes
1/4 cup onion, chopped (optional)
1/2 cup pitted ripe black olives (optional)
sour cream (optional)

Steps:

  • Cook ground beef in large skillet over medium heat 7-9 minutes or until beef is no longer pink; drain.
  • Remove pan from heat.
  • Stir in taco seasoning mix, cheese and water.
  • Preheat oven to 375°F.
  • Unroll crescent dough; separate into triangles.
  • Arrange triangles in a circle on Classic Round Pizza Stone with wide ends overlapping in center and points toward outside. (There should be a 5 inch diameter opening in center.) I use my Pampered Chef pizza stone, but any flat round pan should work--perhaps even a pizza sheet, but I'd spray it with Pam before adding the crescent rolls.
  • Scoop meat mixture evenly onto widest end of each triangles up over filling and tuck under wide ends of dough at center of ring. (Filling will not be completely covered).
  • Bake at 20-25 minutes or until golden brown.
  • Shred lettuce and chop tomato, onion, olives, and bell pepper (if desired).
  • If you want to do something fancy, scoop out a bell pepper and fill with salsa and put into center of ring.
  • Add your toppings to top of ring and finish with more shredded cheese and sour cream.
  • This is great with a salad.

1 jalapeno pepper, seeded & finely chopped
1 tablespoon taco seasoning mix
1 garlic clove, pressed
6 cups chicken broth
1/2 cup thick & chunky salsa
1/4 cup lime juice
2 cups cooked chicken, chopped
1/4 cup cilantro, chopped

Steps:

  • In large pot, cook onion, jalapeno, taco seasoning & garlic over med. heat 2-3 minutes or until crisp-tender.
  • Add chicken broth, salsa & lime juice. Cover & bring to a boil; reduce heat to a simmer. Stir in chicken and cilantro.
  • Ladle into bowls & top with your choice of additional toppings which could include: broken tortilla chips, diced avocado, sour cream, diced tomato.

I found this recipe at a Pampered Chef "Power Cooking" show. It was served there and was so good. I came home and made it as part of my OAMC. It was great, even after being frozen. For my family, I make the whole recipe and then halve it when I put it into my freezer. Each bag makes about 6-8 servings, so this recipe will feed my family multiple times. Cook time doesn't include the cooling time before freezing.

2 lbs fresh lean ground beef
1 onion, coarsely chopped
1 (4 ounce) can diced green chilies
1 (1 1/4 ounce) taco seasoning, packet
1 (1 ounce) Hidden Valley Ranch dip, packet
2 (11 ounce) cans corn, undrained
4 (14 ounce) cans stewed tomatoes, undrained
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can kidney beans, undrained
1/2 cup fresh cilantro, chopped (optional)
grated monterey jack cheese, and or cheddar cheese

Steps:

  • Brown the meat with the onions in an 8-qrt stockpot.
  • When cooked all the way through, add remaining ingredients and cook over medium heat for 30 minutes.
  • Eat now if you are not freezing it. Top with grated cheese, sour cream, tortilla chips, etc.
  • If freezing, let cool completely and pour into freezer bags. First mark the bags with "Taco Soup, Reheat to Serve" and the date.
  • I usually let the bag partially thaw, enough to get it out of the bag and then heat over low until warmed through.
