Adapted from a recipe on Maria's Health blog... I have seen photos of this bread and it actually looks like... bread! Dying to try it for my hamburgers. Others cooks report this recipe makes great hamburger/hot dog buns and ciabatta-style sandwich rolls.

1 1/4 cups blanched almond flour (or 1/2 cup coconut flour)
5 tablespoons psyllium, husk powder (no substitutes)
2 teaspoons baking powder
1/2 teaspoon sea salt
3 egg whites (8 egg whites if using coconut flour)
1 cup boiling water (or very hot tomato-basil soup for Italian bread)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium sized bowl, combine the flour, psyllium powder (no substitutes: flaxseed meal won't work), baking powder and salt. Mix until dry ingredients are well combined.
  • Add in the eggs and mix until a thick dough.
  • Add boiling water or soup into the bowl. Mix until well combined and dough firms up.

½ cup brown sugar
½ cup chopped walnuts, or more to taste
1 ½ teaspoons ground cinnamon, or more to taste
1 cup powdered sugar
2 tablespoons almond milk
1 tablespoon vegan margarine, melted

Steps:

  • Prepare dough: Place almond milk, melted vegan margarine, 1/2 cup sugar, salt, vanilla, and flour into a bread machine in the order listed. Start the Dough setting.
