MANGO BUTTERMILK SOUP

Categories     dessert

Time 12h

Yield 4 servings

Number Of Ingredients 7

1 1/2 pounds or 2 large ripe mangoes, peeled and pitted
2 cups chilled buttermilk
1/2 teaspoon grated orange rind
Salt and freshly ground black pepper
1 cup orange juice
2 tablespoons sliced scallion for garnish
1/2 cup sour cream

Steps:

  • Set aside some of the mango so you have about 1/2 cup diced and reserved for garnish.
  • Roughly chop the remaining mango and puree it in a food processor with the buttermilk, orange rind, and juice. Season to taste with salt and pepper.
  • Cover and chill overnight. Adjust the seasoning before serving. Garnish with reserved diced mango, scallion and a dollop of sour cream centered in the middle.

Tips:

  • Choose ripe mangoes: The riper the mangoes, the sweeter and more flavorful the soup will be. Look for mangoes that have a deep yellow or orange color and that are slightly soft to the touch.
  • Use fresh ginger and garlic: Fresh ginger and garlic add a lot of flavor to the soup. If you don't have fresh ginger or garlic, you can use ground ginger and garlic powder, but the flavor will be less intense.
  • Don't overcrowd the pan: When you're cooking the mangoes, don't overcrowd the pan. This will prevent the mangoes from cooking evenly and will make the soup watery.
  • Simmer the soup for at least 30 minutes: Simmering the soup for at least 30 minutes helps to develop the flavors and thicken the soup.
  • Serve the soup hot or cold: Mango soup can be served hot or cold. If you're serving it hot, garnish it with a dollop of yogurt or sour cream. If you're serving it cold, chill it for at least 2 hours before serving.

Conclusion:

Mango soup is a delicious, refreshing, and healthy soup that can be enjoyed by people of all ages. It's a great way to use up ripe mangoes and it's also a good source of vitamins and minerals. The soup is easy to make and can be tailored to your own taste preferences. So next time you have a ripe mango, give this soup a try!
