GRAM'S HAM LOAF

Gram's Ham Loaf image

Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic.

2 pounds ground smoked ham
2 pounds ground pork
2 cups crushed graham crackers
1 ½ cups evaporated milk
3 eggs, beaten
1 (10.75 ounce) can condensed tomato soup
1 cup brown sugar

  • Bake in the preheated oven for 2 hours. Slice and serve with reserved sauce.

Tips:

  • Choose a thick-cut ham slice for a more flavorful and juicy result.
  • Use a sharp knife to score the ham slice in a diamond pattern. This will help the milk and seasonings penetrate the meat.
  • Don't overcrowd the baking dish. Give the ham slice enough space so that it can cook evenly.
  • Bake the ham slice in a preheated oven. This will help to ensure that it cooks evenly throughout.
  • Baste the ham slice with the milk mixture every 20 minutes or so. This will help to keep it moist and prevent it from drying out.
  • Cook the ham slice until it reaches an internal temperature of 140 degrees Fahrenheit. This will ensure that it is cooked through but still juicy.
  • Let the ham slice rest for 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat.
