1 lb sauerkraut, well -drained
1 lb swiss cheese, diced small
1/2 teaspoon sugar
2 teaspoons caraway seeds
1 teaspoon dill weed
1/2-1 cup mayonnaise (or just enough to bind it together)
1/4 teaspoon prepared mustard

Steps:

  • Thoroughly mix all ingredients together in a mixing bowl.
  • Chill or serve right away.

"FAKE" HAM SALAD--SOUTHWESTERN PENNSYLVANIA STYLE



We ate this on Mama's fresh homemade bread growing up in southwestern Pennsylvania. It is so good.

1 & 1/2 pound(s) bologna
1/2 cup(s) sweet pickle relish
1/2 cup(s) shredded cheddar (optional)
1 & 1/4 cup(s) mayonnaise or miracle whip

Steps:

  • I buy the Bologna from the deli and they cut it into 2 large pieces.
  • Using either a food grinder or processor, grind meat. If using a processor, use the blade and not the grater plate and be sure to use the pulse button until it is ground to your liking. Once ground, put in large mixing bowl.
  • Mix in your relish and cheese with large spoon. Add mayonnaise and mix well. Serve on any type of bread or use as a dip with crackers. Makes approximately 5-6 cups.

It is a simple recipe and can be seasoned up if you want. I have altered a recipe I found in an Amish newspaper and my main addition is the horsey sauce, which I love....

1 lb chopped ham, strips or small cubes
3/4 lb baby swiss, finely shredded (i like horseradish cheese too)
1 1/2 - 2 c sauerkraut, rinsed and drained
1 Tbsp dill weed
2 - 3 tsp caraway seeds
2 - 4 Tbsp horseradish sauce (depending on taste)
1/3 - 1/2 c mayonnaise dressing
salt & pepper to taste

Steps:

  • 1. Shredding the baby swiss cheese, chop the ham and rinse/drain the sauerkraut really well. I usually squeeze the kraut with my hands to get the most liquid out as possible.
  • 2. Add all your ingredients in a bowl and stir together till well combined.
  • 3. This is the horsey sauce that I use. It most certainly has a bite to it.
