Time 50m

Yield 4 ramekins, 4 serving(s)

Number Of Ingredients 8

1 large onion, minced
5 garlic cloves, minced
1/2 cup olive oil
1/8 teaspoon cayenne pepper
4 slices bacon, crisply cooked and crumbled
1 pint oyster, with liquid, drained reserving liquid (I cut oysters in half if too large)
1 1/4 cups seasoned dry bread crumbs
1/4 cup grated parmesan cheese

Steps:

  • Preheat over 350 degrees.
  • Saute onions and garlic in olive oil until slightly brown.
  • Add drained oysters and cayenne pepper.
  • Cook until edges curl.
  • Remove from heat; stir in breadcrumbs, Parmesan cheese, oyster liquid and bacon. Mix well. Mixture should be very moist (like stuffing). If too dry, add additional water. Top with additional breadcrumbs and cheese.
  • Spoon into individual greased ramekins or custard cups.
  • Bake for 30 minutes.

Tips:

  • Select Fresh Oysters: Choose plump and firm oysters with tightly closed shells. Avoid any oysters with cracked or damaged shells, as they may be spoiled.
  • Properly Clean Oysters: Scrub the oyster shells thoroughly with a stiff brush to remove any dirt or debris. Rinse them well under cold running water.
  • Shuck and Separate Oysters: Carefully open the oyster shells using an oyster knife. Remove the oyster meat and discard the shells. Separate the oyster meat from the liquor.
  • Bread Oysters Properly: Use a three-step breading process to ensure the oysters are evenly coated. First, dip them in flour, then in beaten eggs, and finally in seasoned breadcrumbs.
  • Use High-Quality Parmesan Cheese: Opt for freshly grated Parmesan cheese for the best flavor and texture. Pre-shredded cheese often contains additives and may not melt as smoothly.
  • Preheat Oven and Use a Baking Sheet: Preheat the oven to the desired temperature before baking. Use a baking sheet lined with parchment paper to prevent the oysters from sticking.
  • Bake Until Golden Brown: Bake the oysters until they are golden brown and crispy. The exact baking time may vary depending on the size of the oysters and the temperature of the oven.

Conclusion:

Oyster Parmesan is a delightful and easy-to-make appetizer or main course that combines the briny flavor of fresh oysters with the richness of melted Parmesan cheese. By following these tips and using high-quality ingredients, you can create a delicious and impressive dish that will surely be a hit with your friends and family. Whether you prefer a classic preparation or a more creative twist, Oyster Parmesan is a versatile dish that offers endless possibilities for experimentation and enjoyment.
