Time 35m

Yield 4

Number Of Ingredients 11

4 ounces oyster mushrooms, trimmed
1 cup buttermilk
1 ½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground mustard
non-stick cooking spray
2 tablespoons vegetable oil

Steps:

  • Preheat an air fryer to 390 degrees F (200 degrees C).
  • Place oyster mushrooms in a bowl and pour buttermilk on top. Toss to coat mushrooms with buttermilk and marinate for 15 minutes.
  • Meanwhile, add flour, salt, pepper, garlic powder, onion powder, paprika, and ground mustard to a large resealable zip-top bag. Seal and shake until evenly combined.
  • One at a time, take a mushroom out of the buttermilk mixture and drop in the seasoned flour. Toss to coat and transfer to a plate. Once all mushrooms are coated, repeat the breading step until all mushrooms are breaded twice and set them on another plate.
  • Spray the basket of the air fryer with nonstick cooking spray. Spread out breaded mushrooms in the basket of the air fryer in one layer, making sure not to overcrowd (you will need to do this in batches).
  • Air-fry mushrooms for 4 minutes. Liberally brush mushrooms with vegetable oil and air-fry for 4 minutes more. Using tongs, flip the mushrooms over and cook 2 minutes more. Repeat with remaining mushrooms

Tips:

  • Choose fresh oyster mushrooms: Look for mushrooms that are firm and have a slightly moist surface. Avoid mushrooms that are slimy or have any signs of bruising or discoloration.
  • Clean the mushrooms thoroughly: Use a soft brush or a damp paper towel to gently wipe away any dirt or debris from the mushrooms. Do not wash the mushrooms under running water, as this can make them soggy.
  • Use a sharp knife to slice the mushrooms: This will help to prevent them from tearing or shredding.
  • Cook the mushrooms until they are tender: Oyster mushrooms should be cooked until they are soft and have a slightly chewy texture. Overcooking can make them tough and rubbery.
  • Season the mushrooms to taste: Use your favorite herbs and spices to flavor the mushrooms. Some good options include garlic, thyme, rosemary, and paprika.
  • Serve the mushrooms immediately: Oyster mushrooms are best served fresh. Leftovers can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Conclusion:

Oyster mushrooms are a delicious and versatile ingredient that can be used in a variety of dishes. They are a good source of protein, fiber, and antioxidants. This oyster mushroom spread is a simple and flavorful recipe that can be enjoyed as a spread on sandwiches or crackers, or as a dip for vegetables or chips. It is also a great way to use up leftover oyster mushrooms.
