The Best Ever Vegan Cinnamon Rolls Recipe by Tasty image

Here's what you need: vegan butter, almond milk, vegan butter, organic sugar, active dry yeast, flour, salt, vegan butter, brown sugar, ground cinnamon, powdered sugar, almond milk, vanilla extract

Provided by Merle O'Neal

Categories     Desserts

Yield 8 servings

Number Of Ingredients 13

2 tablespoons vegan butter, to coat the foil pan
2 cups almond milk, at room temperature
½ cup vegan butter, melted
¼ cup organic sugar
1 packet active dry yeast
5 ½ cups flour, divided
1 teaspoon salt
¾ cup vegan butter
¾ cup brown sugar
2 tablespoons ground cinnamon
1 cup powdered sugar
2 tablespoons almond milk
½ teaspoon vanilla extract

Steps:

  • Generously rub two disposable foil pie pans with vegan butter.
  • In a large bowl, whisk together the almond milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 5 cups flour and 1 teaspoon of salt to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • Preheat oven to 350˚F (180˚C).
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ½ cup (95g) of flour and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened vegan butter evenly over the dough.
  • Sprinkle evenly with brown sugar and cinnamon.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8 cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • To prepare the frosting. In a medium-size mixing bowl, whisk together powdered sugar, almond milk, and vanilla until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven at 350˚F (180˚C) for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.
  • Enjoy!

1 cup milk
⅓ cup butter
1 (.25 ounce) package active dry yeast
½ cup white sugar
4 ½ cups all-purpose flour
1 teaspoon salt
3 eggs
¾ cup brown sugar
1 tablespoon ground cinnamon
½ cup raisins
1 teaspoon light corn syrup
½ teaspoon vanilla extract
1 ¼ cups sifted confectioners' sugar
2 tablespoons half-and-half cream

Steps:

  • Heat the milk in a small saucepan until it bubbles, then remove from heat. Add the butter and stir until melted; let cool until lukewarm.
  • In a large mixing bowl, dissolve the yeast in the milk mixture. Add the sugar, 3 cups of flour, salt and eggs; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface and roll into a 10x 14 inch rectangle. Lightly brush the far edge with water. • The next morning, preheat oven to 375 degrees F (190 degrees C). Take the rolls out of the refrigerator and let stand at room temperature for 30 minutes.
  • Bake the rolls for 25 to 30 minutes or until golden. Meanwhile, combine the corn syrup with the vanilla in a small bowl. Whisk in the powdered sugar and enough cream to make a thick glaze; set aside. Drizzle the glaze over the rolls and serve warm.

Tips:

  • Use fresh yeast. Fresh yeast is more active than dry yeast and will produce a lighter, fluffier cinnamon roll. If you are using dry yeast, be sure to proof it before using it.
  • Make sure your ingredients are at room temperature. This will help the dough rise more evenly. If your ingredients are cold, the dough will take longer to rise and may not rise as much.
  • Don't over-knead the dough. Over-kneading the dough will make it tough. Knead the dough just until it is smooth and elastic.
  • Let the dough rise in a warm place. The ideal temperature for rising dough is between 75 and 85 degrees Fahrenheit. If your kitchen is too cold, you can preheat your oven to 100 degrees Fahrenheit, then turn it off and place the dough in the oven to rise.
  • Don't over-proof the dough. Over-proofing the dough will make it collapse. Proof the dough until it is doubled in size, but not more.
  • Roll the dough out thinly. The thinner you roll the dough, the flakier your cinnamon rolls will be.
  • Use plenty of cinnamon sugar. Don't be shy with the cinnamon sugar! The more cinnamon sugar you use, the more flavorful your cinnamon rolls will be.
  • Bake the cinnamon rolls until they are golden brown. Over-baking the cinnamon rolls will make them dry. Bake the cinnamon rolls until they are golden brown on top and cooked through in the center.

Conclusion:

Overnight vegan cinnamon rolls are a delicious, easy-to-make breakfast treat. They are perfect for busy mornings or for special occasions. With their sweet, gooey cinnamon sugar filling and their soft, fluffy texture, they are sure to be a hit with everyone who tries them. So next time you are looking for a delicious and satisfying breakfast, give overnight vegan cinnamon rolls a try!
