Yield 6 to 8 servings

Number Of Ingredients 0

Steps:

  • Core 1 1/2 pounds small green tomatoes and cut into wedges. Bring 2 cups water and 1/2 cup white wine vinegar to a boil in a saucepan. Add the tomatoes in batches and cook until crisp-tender, about 3 minutes; drain and let cool. Whisk 1/4 cup each white wine vinegar, olive oil, chopped parsley and chopped mint and 1 tablespoon each kosher salt, sugar and minced Fresno chile in a large bowl. Add the tomatoes and toss. Refrigerate at least 4 hours or overnight.

Tips:

  • Select ripe, flavorful tomatoes. Look for tomatoes that are bright red and free of blemishes. Avoid tomatoes that are too soft or have green shoulders.
  • Use high-quality olive oil. The olive oil you use will greatly impact the flavor of your marinated tomatoes. Choose a good quality extra virgin olive oil that has a fruity, peppery taste.
  • Add fresh herbs and spices. Fresh herbs, such as basil, oregano, and thyme, add a lovely flavor to marinated tomatoes. You can also add spices, such as garlic, red pepper flakes, or cumin.
  • Let the tomatoes marinate for at least 30 minutes. The longer the tomatoes marinate, the more flavorful they will be. You can marinate them for up to 24 hours.
  • Serve the tomatoes at room temperature. This will allow the flavors to fully develop.

Conclusion:

Marinated tomatoes are a delicious and easy appetizer or side dish. They are perfect for summer gatherings and potlucks. With just a few simple ingredients, you can create a flavorful and refreshing dish that everyone will enjoy. So next time you have a tomato glut, don't let them go to waste. Make a batch of marinated tomatoes instead!
