Tips:

  • Prep the Ingredients: Before you start, measure and prepare all the ingredients. This will make the baking process smoother.
  • Soften the Butter: Softened butter incorporates more easily into the batter, resulting in a lighter and fluffier texture. If you forget to soften the butter, microwave it for a few seconds or let it sit at room temperature until it's soft.
  • Don't Overmix: Overmixing the batter can result in a tough and dense cake. Mix just until the ingredients are combined.
  • Use Fresh Lemon Juice: Fresh lemon juice adds a bright, tangy flavor to the cake. Avoid using bottled lemon juice, as it lacks the same flavor intensity.
  • Don't Forget the Streusel Topping: The streusel topping adds a delightful crunch and sweetness to the cake. Make sure to sprinkle it evenly over the batter.
  • Let it Cool: Allow the cake to cool completely before serving. This will give it time to set and develop its full flavor.

This overnight lemon country coffee cake is a delightful treat that combines the tangy flavors of lemon and the comforting warmth of coffee. With its moist, tender crumb and crunchy streusel topping, it's the perfect companion for a morning cup of coffee or an afternoon snack.
