OVERNIGHT CHINESE DAIKON RADISH PICKLES
I had a bunch of daikon radishes from my organic coop that I had no idea what to do with and so many of the recipes that I found were sophisticated Japanese dishes that I just haven't felt like making. I found this recipe for pickled daikon on allrrecipes.com. It was super easy, quick and DELICIOUS. I couldn't believe how yummy it was. I guess it is not for everyone, though. My husband wasn't as taken as I was, but my 1 1/2 yr old loved them! Salty, crunchy and a little bit of kick! Yum!

Tips:
- Choosing the right daikon radish is key. Look for firm, white radishes that are free of blemishes and bruises.
- Use a sharp knife or mandoline to slice the radishes thinly. This will help them pickle evenly.
- Be sure to pack the radishes tightly into the jar. This will help them stay submerged in the pickling liquid.
- Use a variety of spices and seasonings to flavor the pickling liquid. This will give the pickles a complex and delicious flavor.
- Allow the pickles to ferment for at least 4 days before eating them. This will give them time to develop their full flavor.
- Store the pickles in the refrigerator for up to 2 months.
Conclusion:
Overnight Chinese Daikon Radish Pickles are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. They are also a great way to use up leftover daikon radishes.
