One 28-ounce bag frozen shoestring fries
1/4 cup pepperoni slices
1/2 cup cooked ground sausage
1/2 cup pizza sauce, plus more for dipping
1/4 cup chopped banana peppers
2 cups grated mozzarella (from a block, not the pre-shredded kind)
1/2 cup grated Parmesan

Steps:

  • Put a medium cast-iron skillet in the oven and preheat the oven to 400 degrees F.

2 1/2 lbs potatoes
1/4 cup tomato paste
3 tablespoons vegetable oil
1 tablespoon dried oregano
2 teaspoons fennel seeds
2 teaspoons mild paprika
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon sugar
1/2 cup grated parmesan cheese (optional)

Steps:

  • Preheat oven to 400°F.
  • Line a large baking sheet with aluminum foil and coat lightly with oil.
  • Grind fennel seed, oregano and basil into a powder using a spice mill or mortar and pestle.
  • Wash, peel and slice potatoes into thin french fry shapes.

Steps:

  • Preheat oven to 400° F, 200° C or Gas Mark 6.
  • Place minced garlic into microwave safe bowl and add oil. Microwave for 1 to 2 minutes, depending on power of microwave, you are only heating the oil and garlic to blend and intensify, not cooking anything.
