GARLIC BUTTER ROASTED MUSHROOMS

Garlic Butter Roasted Mushrooms image

Recipe video above. Here's a simple, incredibly delicious way to roast mushrooms: tossed in garlic butter then roasted on a high temp to make them golden brown on the outside whilst keeping them juicy on the inside. The addition of olive oil stops the butter from burning and also adds a touch of extra flavour - but the dominant flavour is still butter (and garlic!). The lemon and thyme finishing touch is optional - it's terrific plain - it's an extra flavour option.Serves 2 as a main, 4 - 5 as a side.

Number Of Ingredients 5

1 1/2 pounds wild mushrooms, trimmed and brushed clean
4 tablespoons olive oil
2 tablespoons unsalted butter, melted
Coarse salt and freshly ground pepper
1 to 2 tablespoons fresh thyme leaves

Steps:

  • Preheat oven to 400 degrees. In a 9-by-13-inch baking dish, toss mushrooms with oil and butter. Season with salt and pepper, and sprinkle with thyme. Roast until golden and cooked through, about 40 minutes. Remove from oven; serve hot.

Tips:

  • Choose the right mushrooms: Any type of wild mushroom can be used for this recipe, but some are more flavorful than others. Look for mushrooms with a firm texture and a strong aroma. Some good choices include porcini, chanterelles, and morels.
  • Clean the mushrooms thoroughly: Be sure to clean the mushrooms well before cooking them. Use a soft brush to remove any dirt or debris from the surface of the mushrooms. You can also rinse the mushrooms under cold water, but be careful not to soak them for too long.
  • Use fresh herbs: Fresh herbs add a lot of flavor to this dish. If you don't have fresh herbs on hand, you can use dried herbs, but they won't be as flavorful.
  • Don't overcrowd the pan: When roasting the mushrooms, be sure not to overcrowd the pan. This will prevent the mushrooms from cooking evenly. Roast the mushrooms in a single layer so that they have plenty of space to brown.
  • Roast the mushrooms until they are tender: The mushrooms should be roasted until they are tender and slightly browned. This will take about 15-20 minutes.

Conclusion:

Oven-roasted wild mushrooms are a delicious and versatile dish that can be enjoyed as a side dish, appetizer, or main course. They are also a great way to add some extra flavor to your favorite soups, stews, and casseroles. With a few simple ingredients and a little bit of time, you can easily make this delicious dish at home.
