Steps:
- Place 2 baking sheets in the oven and preheat to 425 degrees F.
- Cut all the vegetables into 1 1/2-inch pieces. Cut the onions through the base core to keep some of the layers in chunky pieces. Toss all the vegetables with garlic, olive oil and salt in large bowl. Season generously with pepper.
- Carefully remove the heated baking sheets from the oven, brush or drizzle with olive oil. Divide the vegetables evenly between the 2 pans, spreading them out to assure they don't steam while roasting. Roast the vegetables until tender and golden brown, stirring occasionally, about 45 minutes to 1 hour.
OVEN-ROASTED VEGETABLES
This is an excellent side dish to almost any meal. It is healthy, and you can tailor it to fit any vegetables that are in season (grape tomatoes are good, but they do tend to explode, though). I find that this recipe is great for large groups, because, aside from the prep (a bunch of cutting and chopping), it is easy to make a lot of food with minimal effort. Be creative, and enjoy!

OVEN-ROASTED PORK TENDERLOIN WITH ROASTED POTATOES AND VEGETABLES
I loved the combination of herbs and spices that acted as both a wet rub for the pork and seasoning for the potatoes and vegetables--sweetness from the balsamic vinegar and parsnips, earthiness from the rosemary and carrots, and a little tang from the garlic.

OVEN-ROASTED POT ROAST WITH VEGETABLES
My family loves pot roast. Though I usually use my dutch-oven I find it is too small to cook enough vegetables to feed my large family. So I came up with a way to use my roasting pan to keep it simple. The long cooking time left the roast fork tender, just be sure to cut against the grain of the meat and not with it.

Tips:
- Choose firm vegetables: Softer vegetables like zucchini and mushrooms can be added towards the end of cooking to prevent overcooking.
- Cut vegetables uniformly: This ensures they cook evenly. For example, cut carrots into similar-sized rounds or florets.
- Toss vegetables in oil and seasonings: This helps them roast and brown evenly. Use a good quality olive oil and your favorite herbs and spices.
- Spread vegetables in a single layer: This allows them to roast properly and prevents steaming. If necessary, use two baking sheets.
- Roast vegetables at a high temperature: This helps them caramelize and develop a delicious flavor. Aim for 425°F (220°C) or higher.
- Stir or shake the vegetables halfway through cooking: This ensures they cook evenly and prevents burning.
- Roast vegetables until tender-crisp: You want them to be slightly tender but still retain some bite. Overcooked vegetables will be mushy and lose their flavor.
Conclusion:
Roasted vegetables are an easy and delicious side dish that can be enjoyed with a variety of meals. They are also a great way to get your daily dose of vegetables. With a little planning and preparation, you can easily roast vegetables at home. Just follow the tips above and you'll be sure to end up with a delicious and healthy dish that the whole family will enjoy.
