Time 35m

Yield 4 servings

Number Of Ingredients 9

2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

Time 40m

Yield 8 servings

Number Of Ingredients 7

1 (2 to 3-pound) side salmon, skin on
2 lemons, juiced
4 tablespoons stone-ground mustard
1 cup shelled pistachio nuts
1/2 cup panko bread crumbs
4 tablespoons canola oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the side of salmon on an oven proof baking sheet, skin side down. Mix the lemon juice and mustard together in a small bowl and spread sparingly over the top of the salmon.
  • Coarsely grind the pistachios in a food processer. Add the panko bread crumbs, the oil and salt and pepper, to taste. (The bread crumbs should be slightly wet, as it helps the stick to the salmon.)
  • Sprinkle the pistachio mixture over the mustard to cover the salmon evenly.
  • Put in the preheated oven and bake until the salmon reaches the correct doneness, about 15 to 20 minutes. Remove from the oven to a serving platter.
  • Remember the fish needs to rest outside of the oven for at least 5 minutes. It will continue to cook, so remove the salmon from the oven with this in mind. Enjoy.

Tips:

  • Choose fresh, high-quality salmon. Look for fillets that are firm and have a bright pink color. Avoid fillets that are slimy or have brown spots.
  • Make sure the salmon is completely thawed before cooking. If it is not, it will not cook evenly.
  • Pat the salmon dry before coating it with the pistachio crust. This will help the crust adhere to the fish.
  • Use a food processor to finely chop the pistachios. This will help them evenly coat the salmon.
  • Press the pistachio crust onto the salmon firmly. This will help it stay in place during cooking.
  • Roast the salmon at a high temperature for a short amount of time. This will help it cook evenly without drying out.
  • Serve the salmon immediately with your favorite sides.

Conclusion:

Oven-roasted pistachio-crusted salmon is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pistachio crust adds a nutty flavor and crunch to the salmon, and the roasted vegetables are a healthy and flavorful side dish. This dish is sure to please everyone at your table.
