Time 35m

Number Of Ingredients 6

2 medium zucchini
1/4 c olive oil
2 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1/3 c grated or dry parmesan cheese

Steps:

  • 1. Wash and slice zucchini. (I use a wavy slicer so the cheese sticks into the waves) about 1/4 inch slices
  • 2. Toss zucchini in olive oil, salt, pepper and garlic
  • 3. Add parmesan to zucchini and toss.
  • 4. Place zucchini on nonstick baking sheet in a single layer
  • 5. Bake in 375 degree oven for 15-20 mins or until zucchini is tender and cheese browns

Tips:

  • Choose the right zucchini: Select small to medium-sized zucchini that are firm and have a deep green color. Avoid large zucchini as they tend to be more watery and less flavorful.
  • Slice the zucchini evenly: This will ensure that they cook evenly. Cut the zucchini into 1/2-inch thick rounds or spears.
  • Use a good quality olive oil: Olive oil is a healthy and flavorful fat that will help the zucchini to roast nicely. Make sure to use extra virgin olive oil for the best flavor.
  • Season the zucchini well: To enhance the flavor of the zucchini, season it with salt, pepper, garlic powder, Italian seasoning, and paprika. You can also add other herbs and spices of your choice.
  • Roast the zucchini at a high temperature: This will help to caramelize the zucchini and give it a slightly crispy exterior. Roast the zucchini at 425 degrees Fahrenheit for 15-20 minutes, or until it is tender and slightly browned.
  • Serve the zucchini immediately: Roasted zucchini is best served hot and fresh out of the oven. You can garnish it with grated Parmesan cheese, chopped parsley, or a squeeze of lemon juice.

Conclusion:

Oven-roasted Parmesan zucchini is a simple and delicious side dish that can be enjoyed by people of all ages. It is a healthy and flavorful way to get your daily dose of vegetables. With its crispy exterior and tender interior, roasted Parmesan zucchini is sure to be a hit at your next gathering. So next time you are looking for a quick and easy side dish, give this recipe a try. You won't be disappointed!
