DUTCH OVEN MACARONI AND CHEESE

Dutch Oven Macaroni and Cheese image

This Dutch oven mac and cheese is a staple in my home. I sometimes add burger meat or bacon to it to liven it up but it's delicious enough on its own! Regularly served as the main course with just a veggie side, as it can be a bit heavy if you're a mac and cheese lover who can't resist seconds (like me).

Time 1h30m

Yield 8

Number Of Ingredients 14

1 (12 ounce) package seashell pasta
4 tablespoons salted butter
4 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
1 cup shredded sharp Cheddar cheese
1 cup shredded medium Cheddar cheese
1 cup grated Parmesan cheese, or to taste
1 cup panko bread crumbs, or as needed
½ teaspoon salt
½ teaspoon garlic salt
½ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon taco seasoning mix

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain and set aside.
  • Heat an oven-safe Dutch oven over medium heat. Melt butter and flour in the hot pot, stirring, until blended; pour in milk and heavy cream, whisking continuously, until mixture comes to a boil. Continue to boil, stirring continuously, for 2 minutes. Reduce heat to medium-low; continue to stir until sauce thickens, about 10 minutes.
  • Slowly fold in cheeses until melted and smooth. It is okay to raise the heat if you have to, just remember to keep stirring while the heat is on. Fold in cooked pasta until it is coated with cheese.
  • Combine panko bread crumbs, salt, garlic salt, black pepper, onion powder, and taco seasoning in a bowl. Sprinkle macaroni mixture with just enough of the bread crumbs to coat most of the surface; you should still see some pasta underneath the bread crumbs.
  • Bake in the preheated oven for 20 minutes. Turn on the oven's broiler and continue to cook until crust is golden brown and crisp, about 10 minutes. Remove from the oven and let sit for at least 15 to 20 minutes before serving.

DAD'S OVEN BAKED MACARONI AND CHEESE WITH A KICK

DAD'S OVEN BAKED MACARONI AND CHEESE WITH A KICK image

Categories     Pasta     Bake

Yield 3 people

Number Of Ingredients 10

1-1 1/2 cup macaroni noodles, uncooked (I use large elbow-type pasta and end up using about 2.5 cups)
1/8 cup hard butter or margarine
1/8 cup flour
1 1/2 cups milk (I use 2% milk and it's still delish)
1 cup grated cheddar cheese, divided
3/8 teaspoon salt
3/8 teaspoon black pepper
3/8 teaspoon cayenne powder
1/4 teaspoon dry mustard
3/8 cup dry breadcrumbs (I use the giant garlic ones from Trader Joe's) 

Steps:

  • 1. Cook and drain macaroni; rinse with cold water. 2. Meanwhile, melt butter or margarine in a pot on the stove. 3. Stir in flour. 4. Add milk and cook, stirring frequently until thickened. 5. Add seasonings and continue cooking on stove for 1 - 2 minutes longer. (I usually add a little more spices than what's called for). 6. Add 3/4 cups cheese and stir until melted; may need to be cooked for 1 more minute to melt the cheese. 7. Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. You can layer the noodles and sauce if you like. 8. Sprinkle the breadcrumbs on top, followed by the remaining 1/4 cup cheese. 9. Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

OVEN MACARONI

Oven Macaroni image

A quick side dish or vegetarian meal. Recipe from A Campbell Cookbook - Cooking With Soup sent to me by mikekey, my spring 2009 cookbook swap partner.

Provided by lauralie41

Categories     Toddler Friendly

Time 40m

Yield 3 1/2 cups

Number Of Ingredients 8

11 ounces tomato bisque soup, preferably Campbells
1/3 cup water
1 1/2 cups cheddar cheese, shredded
2 tablespoons parmesan cheese, grated
1 teaspoon oregano leaves, crushed
1/8 teaspoon garlic salt
2 cups macaroni, cooked, spiral shaped
1 green pepper (optional)

Steps:

  • In a 1 quart casserole dish blend together soup, water, cheese, and seasoning. Gently stir in cooked macaroni.
  • Bake in a 400 degree oven for 25 minutes or until hot. Stir mixture and garnish with green pepper rings if desired. Serve immediately.

Tips:

  • Use the right macaroni: Elbow macaroni is the classic choice for macaroni and cheese, but you can also use other shapes like shells, penne, or rotini.
  • Cook the macaroni al dente: This means cooking it until it is just tender, but still has a little bite to it. Overcooked macaroni will become mushy and not hold its shape.
  • Use a good quality cheese: The cheese is the star of the show in macaroni and cheese, so don't skimp on quality. Use a sharp cheddar cheese or a combination of cheeses for a more complex flavor.
  • Make a roux: A roux is a thickening agent made from butter and flour. It helps to thicken the cheese sauce and give it a smooth and creamy texture.
  • Season the cheese sauce: Don't forget to season the cheese sauce with salt, pepper, and other spices to taste. A little bit of garlic powder, onion powder, or paprika can also add a nice flavor boost.
  • Top with breadcrumbs: A topping of breadcrumbs adds a nice crunchy texture to macaroni and cheese. You can use plain breadcrumbs or seasoned breadcrumbs for a more flavorful topping.
  • Bake until golden brown: Bake the macaroni and cheese until the top is golden brown and bubbly. This will ensure that the cheese sauce is melted and gooey.

Conclusion:

Macaroni and cheese is a classic comfort food that is loved by people of all ages. It is a simple dish to make, but there are a few tips and tricks that can help you make the perfect macaroni and cheese.
