Steps:

6 slices bacon, chopped
½ cup butter, diced

6 medium russet potatoes
1/2 - onion, optional
- favorite potato seasonings
- olive oil
- flour

Steps:

  • Peel and shred potatoes and half an onion. Place in bowl and drizzle with olive oil, mix to coat. Now add about 1/4c flour, just enough to slightly coat potatoes. Now grab about 2-3 tbl. of potatoes in your hand and squeeze tightly, allowing any liquid to escape. Now place "sticks" on baking sheet sprayed with olive oil. Spray top of potato sticks and bake in a 400° oven for about 20 min. Turn sticks over and spray with olive oil. Bake another 20-30 min. till golden brown and crispy on the outside, and tender on the inside.

1 tablespoon olive oil
