George's Crisp Crusted Oven-Fried Chicken by Judy- Jude image

I am posting this recipe to honor Judy- Jude and also for the "Cookathon" in memory of her (Jan. 09). One of her favorite chicken recipes was "George's Oven-Fried Chicken" and this is the other one. It was created by her father and I often call it KFC Judy D's Father's Recipe(s). Instant Potato Flakes are used and it has a nice taste.

1 (3 -4 lb) cut up whole chickens
1 egg
2 tablespoons milk
1 cup instant potato flakes
1 teaspoon garlic salt
1 teaspoon paprika
1/8 teaspoon cayenne pepper
1/4 cup grated parmesan cheese
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 400 degrees.
  • Wash chicken pieces and pat dry, set aside.
  • Beat egg and milk in a bowl.
  • In another bowl, mix potato flakes and the rest of the spices and parmesan cheese.
  • Melt butter in a shallow baking pan (13"x9"x2").
  • Roll chicken first in egg mixture, then in the potato flake mixture.
  • Next roll coated chicken pieces in the butter as you place them into the pan (skin side up).
  • Bake at 400 degrees for 45 to 50 minutes or until juices from meat run clear when pierced with a fork.
  • Note: If you use garlic powder just be sure to add 1 teaspoon of salt; Judy used seasoned salt per her dad's little crib note on the recipe. I often use more spices to make it taste a little like Kentucky Fried Chicken. This recipe was written up pretty much as I had received it from Judy. Enjoy!

3/4 cup reduced-fat crisp wheat cracker crumbs
1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves

4 skinless boneless chicken breast halves (about 1 pound)

Steps:

  • Heat oven to 425°. Spray rack of broiler pan or baking dish with nonstick cooking spray. Pour dressing into small bowl. Mix cracker crumbs, thyme and paprika in separate small bowl or plastic bag. Dip chicken breasts into dressing; coat with crumb mixture. Place chicken on rack in pan. 1/3 c all-purpose flour
1 Tbsp paprika
2 tsp garlic powder
1 tsp black pepper
1/4-1/2 tsp cayenne pepper
3 lb chicken wings, tips removed

Steps:

  • 1. Cut wings at joint. Preheat oven to 425°.
  • 2. Combine flour, paprika, garlic powder, black pepper, and cayenne pepper in a large resealable zip bag.
  • 3. Shake to mix ingredients and add wings. Shake to coat wings.
  • 4. Line a large baking sheet with release foil and spray with cooking spray.
  • 5. Add wings in a single layer and spray wings with cooking spray. You may need 2 baking sheets depending on size of wings.
  • 6. Bake for 30 minutes. Turn wings over and bake for another 15 minutes or until crispy and done.
  • 7. I sometimes add 1 tsp of Cajun seasoning to the flour mixture and then the wings don't even need sauce. They are tasty just as they are.

4 boneless, skinless chicken breasts (about 5 oz each)
1 tbsp extra-virgin olive oil

Steps:

  • Preheat oven to 375°F. In a shallow bowl, combine breadcrumbs, cheese, zest, paprika, and salt. In another shallow bowl, mix lemon juice and 1 tbsp water. Coat a baking pan with cooking spray. Dip chicken in liquid mixture, then in breadcrumb mixture, coating entire breast, and lay on the baking pan. Repeat with remaining breasts. Drizzle chicken with oil.
