OVEN STEAK
Here's a fast, fuss-free way to cook the perfect steak-no smoky stovetop cooking necessary. The secret to getting a nice sear is to preheat the skillet in the oven. When the meat hits the hot surface, it creates a delectable crust.

Steps:
- Sprinkle both sides of the steaks all over with 1 teaspoon salt and 1/4 teaspoon pepper, then let sit out at room temperature for 30 minutes.
- Meanwhile, position a rack in the center of the oven and place a 12-inch cast-iron skillet on the rack. Preheat the oven to 450 degrees F.
- Carefully remove the hot skillet from the oven and add the steaks, making sure they are spaced apart, so they don't steam. Top each steak with 1 sprig of thyme, one-half sprig of rosemary and 1 tablespoon cold butter. Return the skillet to the oven and cook until the undersides of steaks are well browned, about 4 minutes.
- Carefully remove the skillet from the oven and flip the steaks using tongs, then continue to cook until desired doneness, about 2 minutes more for medium-rare and 3 minutes more for medium. Remove the steaks from the skillet and let rest 5 to 10 minutes before slicing and serving.

A dish my aunt makes quite often. A great way to make a not so tender steak fork tender. Add some pepper flakes to give it some kick, if you like a little heat. Enjoy!

BARBECUED ROUND STEAK
THIS RECIPE came from a 1950s television program called Kay's Kitchen. I gave it a try, and my family gave it rave reviews. It makes a colorful entree served with fresh green beans...or try French fries - the sauce is great for dipping! -Ray Sholes, Butler, Pennsylvania

Tips:
- Choose the right steak: Select a steak that is at least 1 inch thick for best results. Look for a steak with good marbling, as this will help keep it juicy and flavorful during cooking.
- Marinate the steak: Marinating the steak in a mixture of oil, herbs, and spices will help to tenderize it and add flavor. You can marinate the steak for as little as 30 minutes or up to overnight.
- Preheat the oven: Make sure to preheat your oven to the correct temperature before cooking the steak. This will help to ensure that the steak cooks evenly.
- Cook the steak at a high temperature: Sear the steak over high heat to create a nice crust, then reduce the heat and cook to your desired doneness. This will help to keep the steak juicy and flavorful.
- Let the steak rest: Once the steak is cooked, let it rest for a few minutes before slicing and serving. This will help to redistribute the juices and make the steak more tender.
Conclusion:
Oven-barbecued steak is a delicious and easy-to-make meal that is perfect for a weeknight dinner or a special occasion. By following these tips, you can cook a perfect steak every time. Serve the steak with your favorite sides, such as grilled vegetables, mashed potatoes, or salad. Enjoy!
