Time 25m

Yield 4 servings

Number Of Ingredients 10

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

Categories     main-dish

Time 23m

Yield 4 servings

Number Of Ingredients 10

Nonstick cooking spray
1/4 cup orange juice
2 tablespoons fresh lemon juice
2 tablespoons light brown sugar
4 teaspoons chili powder
2 teaspoons finely grated lemon zest
1 teaspoon ground cumin
1/2 teaspoon salt
Pinch cayenne pepper
4 (6-ounce) salmon fillets, about 1-inch thick

Steps:

  • Preheat oven to 400 degrees F. Coat a shallow baking dish with cooking spray.
  • In a small bowl, whisk together orange juice, lemon juice, brown sugar, chili powder, lemon zest, cumin, salt, and cayenne. Using tongs, add salmon fillets to the prepared pan. Pour the orange juice mixture over the salmon and turn to coat both sides. Roast for 15 minutes, until a fork can be easily inserted into the salmon.

Tips:

  • Choose the right salmon: Look for a salmon fillet that is thick and firm, with a deep orange color. Avoid fillets that are thin or have a pale color.
  • Marinate the salmon: Marinating the salmon in a mixture of olive oil, lemon juice, and herbs will help to infuse it with flavor and keep it moist during cooking.
  • Cook the salmon at a high temperature: This will help to create a crispy crust on the outside of the salmon while keeping the inside tender and juicy.
  • Use a grill pan or baking sheet: A grill pan will give the salmon a nice charred flavor, while a baking sheet will make it easier to clean up.
  • Serve the salmon immediately: Salmon is best served immediately after it is cooked, so that it can be enjoyed at its peak flavor.

Conclusion:

Oven-barbecued salmon is a delicious and easy-to-make dish that is perfect for a weeknight meal. It can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice. With its crispy crust and tender, juicy interior, oven-barbecued salmon is sure to be a hit with your family and friends.
