This is really simple with only 5 ingredients but tastes great. I usually use breast fillets & just pour the whole jar of salsa over them with the other ingredients then add a little cheese sprinkled over towards the end of baking. Mmmm Mmmm! Recipe from Masterfoods.

Time 42m

Yield 4 serving(s)

Number Of Ingredients 6

1 kg chicken piece
2 tablespoons oil
1 tablespoon lemon juice
2 tablespoons dried parsley flakes
1/2 cup chunky salsa
2 lemons, sliced into wedges, to serve

Steps:

  • Pre-heat oven to 180.C.
  • Combine chicken with all ingredients except lemon wedges in a baking dish.
  • Cook for 35-40 mins or until chicken is cooked through.
  • Serve with lemon wedges.

Tips:

  • Use ripe, flavorful tomatoes for the salsa. This will give your dish the best flavor.
  • Roast the tomatoes in the oven before adding them to the salsa. This concentrates their flavor and makes them slightly smoky.
  • Add other vegetables to the salsa, such as onions, peppers, and corn. This will give it more texture and flavor.
  • Use a good quality salsa. A great salsa will have a good balance of flavors and will not be too watery or thick.
  • Cook the chicken until it is cooked through, but not dry. Overcooked chicken will be tough and chewy.
  • Serve the salsa chicken with your favorite sides, such as rice, beans, or tortillas.

Conclusion:

Oven-baked salsa chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is a great way to use up leftover chicken or salsa. This dish can be tailored to your liking by adding different vegetables or spices. It is also a healthy and affordable meal that can be enjoyed by the whole family.
