I received this recipe for bacon-wrapped potatoes years ago from a friend. It's a delicious new twist to a baked potato. salt and freshly ground black pepper to taste
½ cup grated Parmigiano-Reggiano cheese

¼ cup fresh Italian flat-leaf parsley

Steps:

  • Place an oven rack in the bottom third of the oven and preheat oven to 450 degrees F (230 degrees C).

Tips:

  • Prick the potatoes with a fork before baking. This will help them cook evenly and prevent them from bursting.
  • Bake the potatoes at a high temperature (425°F/220°C) for the first 30 minutes. This will help them achieve a crispy skin.
  • Reduce the oven temperature to 350°F/175°C for the remaining cooking time. This will help the potatoes cook through without drying out.
  • Add your favorite toppings to the potatoes after they are cooked. Some popular options include butter, sour cream, cheese, chives, and bacon.
  • If you are using a convection oven, reduce the cooking time by about 25%.

Conclusion:

Oven-baked potatoes with bacon are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great side dish for any occasion. With just a few simple ingredients and some time in the oven, you can create a delicious and satisfying meal that the whole family will love.
