Steps:

  • Preheat oven to 350 degrees Fahrenheit.

4 large baking potatoes
4 teaspoons butter
2 tablespoons olive oil
1 garlic clove, crushed and finely minced (optional)
1 teaspoon liquid smoke (choose mesquite -o-r- hickory flavor)
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper, freshly cracked

Steps:

  • FLAVORED OIL: In a small bowl, whisk together olive oil, liquid smoke and garlic. Set aside.
  • SEASONING MIX: In a small dish mix kosher salt, garlic powder and black pepper. Set aside.
  • Wash, scrub and dry potatoes well. With a sharp paring knife, cut out a nice wedge from the potato's middle. Remove the wedge and place 1 teaspoon of butter in the hollow. Sprinkle with seasoning mix. Replace the wedge pressing down gently.
  • Place each potato on its own sheet of foil. Rub the potato with the olive oil mixture making sure to get some of the crushed garlic on the potato. Sprinkle with additional seasoning mix and roll up tightly in aluminum foil.
  • OVEN: Place potatoes in a 350 degree oven for 60 minutes.
  • GRILL: Place potatoes on the grill away from the coals, close the lid and grill for 40-60 minutes depending on the temperature of your grill.

4 tablespoons, plus 1/2 teaspoon, extra-virgin olive oil
2 medium baking potatoes, peeled and sliced very thin
2 cloves garlic, peeled and minced
2 1/2 teaspoons kosher salt
Freshly ground pepper to taste
1 teaspoon minced fresh oregano
2 tablespoons chopped Italian parsley

Steps:

  • Preheat the oven to 350 degrees. Remove the porcini stems from their caps. Shave the dirt from the stems with a small, sharp knife until you reach the clean flesh. Wipe the caps clean using a damp paper towel. Working in two batches, place the stems in a food processor and pulse until coarsely chopped.
  • Brush 1/2 teaspoon of olive oil on the bottom of an 8-by-11-inch shallow baking dish. Arrange the potatoes in the dish in a slightly overlapping layer. Sprinkle 1 clove of garlic evenly over the potatoes and season with 1 teaspoon of salt and pepper. Place the stems in an even layer over the potatoes.

1/4-1/2 teaspoon nutmeg

  • Preheat oven to 400 degrees.
  • Place 1/4 of potatoes in greased oven dish. Sprinkle 1/4 teaspoons of salt and 1/4 teaspoons pepper. On the 2nd layer, sprinkle half of the nutmeg and half of the cheese along with 1/4 tsp salt and 1/4 teaspoons pepper. Sprinkle 1/4 teaspoons salt and 1/4 teaspoons pepper, only on the third layer. These sliced potatoes are so very simple to make and extremely tasty. This recipe originated with my Russian grandmother over 100 years ago, however, they baked them in an outside oven as they did not have the modern facilities of today.

4 large potatoes, peeled
1/4 cup margarine or 1/4 cup butter, melted
1/4 cup plain yogurt or 1/4 cup sour cream
1/4 cup finely chopped green onions or 1/4 cup finely chopped chives

Steps:

  • Preheat oven to 450 F degrees.
  • If you are using young potatoes or potatoes with a clean skin, DO NOT PEEL, just scrub well; otherwise peel potatoes.
  • Slice potatoes lengthwise to about 1/2 inch thick slices.
  • Place in a large bowl; cover with cold water and let sit for about 5 minutes.
  • Drain and pat slices dry with paper towelling.
  • DO NOT RUB POTATOES WITH ANY OILS OR BUTTER.
  • Place directly on middle rack in oven and bake for 20 minutes in preheated 450 F oven.
  • Turn potatoes over and continue to bake for an additional 15 minutes or until cooked.
  • Remove potatoes into a large bowl.
  • Drizzle melted butter or margarine over potatoes; gently turn slices to coat.
  • Serve with additional melted butter or margarine, a dollop of yogurt or sour cream and a sprinkling of chopped green onions or chives.
  • If desired, you may wish to sprinkle sliced potatoes before baking with garlic powder or your choice of a spice.
  • The slices will puff up and turn a nice medium-dark brown when baked.

8 medium yukon gold potatoes
4 Tbsp olive oil, divided
1 tsp sea salt

Steps:

  • 1. Preheat oven to 450'F. Put a large metal baking tray into the oven and let it heat up while the oven heats up. This ensures the crispness of the potatoes. Put the rack on the bottom section of your stove.
  • 2. Slice your potatoes 1/2" thick. Put 1" of water in a large metal pot and add some seas salt, then put the potatoes in the water and boil then simmer until the potatoes are slightly done, about 5 minutes.
  • 3. Test the potatoes for doneness. They should still be somewhat hard inside. Drain well once they are done.
  • 4. In a large bowl, add 2 tablespoons of oil with the sea salt. Add the hot potato slices and toss. Add two more tablespoons of oil and toss again. The tossing is important. You want to rough up the outside of the potatoes a little to ensure they get crisp.
  • 5. Once the oven is heat to the desired temperature, remove the baking pan and put a tablespoon of oil on it and roll it around to ensure the whole pan is oily. This keeps the potatoes from sticking and ensures crispiness.
  • 6. Place the potatoes in a single layer on the hot baking tray and put in the oven for 15-25 minutes.
  • 7. Once that is done remove the potatoes and flip them over to the other side and bake for another 10-20 minutes.
  • 8. These are best served immediately as they will dry out.
  • 9. Enjoy!

2 small onions
3 large potatoes
1 Tbsp chopped fresh sage (optional)
1 large leek
2 1/2 c chicken broth (or vegetable broth)

chopped fresh parsley, to garnish

Steps:

  • 1. Preheat oven to 375F. Heat the oil and butter in a Dutch oven over medium heat. Add the bacon and cook, stirring occasionally, until just beginning to brown.
  • 2. Slice onions and potatoes thinly (peel potatoes, if desired). Wash and slice leek, white part and some of the light green part.
  • 3. Add onion slices to bacon and cook 5-10 minutes, stirring occasionally, until onions have softened and turn golden brown.

  • 1. Preheat Oven to 350 .Get 6 or more Idaho baking potatoes baking potatoes.. Clean potato skins. Tear off Aluminum foil pieces for each potato and set the potatoes on them. Then, slice open part way.
  • 2. Put butter in the middle along with salt, pepper and parmesan cheese (I use Kraft)(I like Morton's Seasoning). Then close up potatoes. Then, wrap the potatoes in the Aluminum foil pieces and put them in pan lined with Aluminum foil or on the oven top rack.(Pan is better the butter melts and could make a mess in oven)
  • 3. Bake 1 hour or until tender. When ready to eat open carefully and put them on the plate. Add sour cream and add anything you want. They are tender. Husband loves them.
