I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

½ cup mayonnaise
2 tablespoons soy sauce, or more to taste
1 large clove garlic, minced
6 (5 ounce) mahi mahi fillets
¼ cup crushed saltine crackers, or more as needed

Steps:

  • Stir mayonnaise, soy sauce, and garlic together in a bowl.

¼ cup raw honey
1 clove garlic, grated
¼ teaspoon coriander
¼ teaspoon white pepper
½ teaspoon chili powder
1 teaspoon of salt, divided
1 orange, divided
2 mangoes, diced
1 yellow bell pepper, finely diced
1 red bell pepper, finely diced
¼ cup finely chopped cilantro
2 tablespoons olive oil
1 lime, juiced

Steps:

  • Preheat the oven to 425 F.
  • Prepare the glaze: In a bowl, combine the honey, garlic, coriander, white pepper, chili powder, ¼ teaspoon salt, and juice from half the orange. Whisk well until completely combined.
  • Place the mahi mahi fillets on a foil-lined baking sheet. Brush each fillet with a generous amount of glaze, reserving any remaining glaze. Slice the remaining half of the orange, and slide the slices under the fillets for baking. You can also put the slices on top of the fillets.
