WILD RICE PILAF BAKE

Wild Rice Pilaf Bake image

I make this recipe for almost every holiday and often take it to potlucks. Usually, I make the pilaf ahead to allow the flavors to blend and then reheat it in the microwave before serving. This also makes for more room in the oven and less chaos when you are putting out a big holiday meal. -Dianne Bettin, Truman, Minnesota

Time 45m

Yield 6

Number Of Ingredients 12

1 tablespoon unsalted butter
1/2 medium onion, finely chopped
1/2 medium red bell pepper, finely chopped
1 1/2 teaspoons kosher salt plus 2 pinches
2 cups long-grain white rice
1 pinch saffron, steeped in 1/4 cup hot but not boiling water
2 1/2 cups chicken broth
1 1-by-2-inch strip orange zest
2 bay leaves
1/2 cup peas, fresh or frozen
1/4 cup golden raisins
1/4 cup pistachios, chopped

  • Preheat the oven to 350.
  • Melt the butter in a 3-quart saucier over medium heat.

  • Transfer the saucier (towel and all) to the oven and bake 15 minutes.
  • Remove and rest at room temperature for 15 more minutes without opening the lid.
  • Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the pilaf will be. Use fresh vegetables, flavorful broth, and fluffy wild rice.
  • Toast the rice: Toasting the rice before cooking it helps to bring out its nutty flavor and aroma.
  • Use a good ratio of liquid to rice: The ratio of liquid to rice is important for getting the right consistency of pilaf. Too much liquid will make the pilaf mushy, while too little liquid will make it dry.
  • Let the pilaf rest before serving: Letting the pilaf rest for a few minutes before serving allows the flavors to meld and the rice to absorb all of the liquid.

Conclusion:

Oven-baked fancy wild rice pilaf is a delicious and easy-to-make side dish that is perfect for any occasion.
