This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

Tips:

  • Prep your ingredients: Chop your vegetables and meat into uniform pieces to ensure even cooking. Marinate your meat beforehand to tenderize it and enhance its flavor.
  • Use a large skillet or wok: This will allow you to easily stir-fry your ingredients and prevent overcrowding, which can lead to steamed vegetables instead of crispy ones.
  • Cook your ingredients in batches: If you're cooking a large amount of food, cook it in batches to prevent overcrowding and ensure that everything cooks evenly.
  • Use high heat: Chop suey is a quick-cooking dish, so make sure to use high heat to sear the meat and vegetables and prevent them from becoming soggy.
  • Add your sauce gradually: Start with a small amount of sauce and add more as needed. This will help you avoid making your chop suey too salty or overpowering.
  • Don't overcook the vegetables: Chop suey vegetables should be crisp-tender, so be careful not to overcook them. Overcooked vegetables will lose their vibrant color and flavor.

Conclusion:

Chop suey is a delicious and easy-to-make dish that is perfect for a quick and healthy weeknight meal. With its colorful vegetables, tender meat, and flavorful sauce, chop suey is a crowd-pleaser that will satisfy everyone at the table. So next time you're looking for a simple and satisfying meal, give chop suey a try. You won't be disappointed!
