Steps:
- Preheat grill or smoker to 275 degrees.
- Make seasoning mix by combining peppers, salt, and garlic powder in a small bowl.
- Lay ribs in a 9x13 aluminum pan. Sprinkle both the top and the bottom of each rib with spice mix. Reserve a small amount.
- Wrap each rib with two slices of bacon, placing them back into the pan, seam side down.
- Sprinkle remaining seasoning over the top of the bacon.
- Sprinkle the brown sugar on top of the bacon evenly.
- Place the pan on your grill over indirect heat. (only turn burner on one part of the grill) Let them "smoke" for 2 hours. They will make an amazing glaze while they do.
- Check internal temperature with a meat thermometer. Pork ribs should be 145 degrees F. in the center. Remove from grill.
- Turn grill up to 325 degrees and place each rib on direct heat, grilling them until the bacon crisps. Brushing with the glaze as you do. This will only take a couple of minutes. No need to worry about the ribs getting overdone.
- Let meat rest for 3 minutes before serving.

OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

MOM'S OVEN-BARBECUED RIBS
My mom made these tender ribs for special Sunday suppers when we were growing up. A few common ingredients are all you need to make the zesty sauce that coats them. My family's eyes light up when I bring a plate of these ribs to the table, and company never suspects how easy they are to prepare. -Yvonne White Williamson, New York

Tips:
- To ensure the ribs are cooked evenly, try to select ribs that are of uniform thickness.
- Before wrapping the ribs in bacon, pat them dry with paper towels to help the bacon adhere better.
- For a crispier bacon wrapping, cook the ribs at a higher temperature for a shorter amount of time.
- If you don't have a meat thermometer, you can check if the ribs are done by inserting a toothpick into the thickest part of the meat. If the toothpick goes in and out easily, the ribs are cooked.
- Let the ribs rest for a few minutes before slicing and serving, to allow the juices to redistribute throughout the meat.
Conclusion:
Oven-baked bacon-wrapped BBQ country ribs are a delicious and easy-to-make dish that is perfect for any occasion.
