OUTRAGEOUS OATMEAL (FLOUR) CHOCOLATE CHIP COOKIES

OUTRAGEOUS Oatmeal (flour) Chocolate Chip Cookies image

In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

OUTRAGEOUS CHOCOLATE COOKIES

OUTRAGEOUS CHOCOLATE COOKIES image

Categories     Cookies     Chocolate

Number Of Ingredients 9

8 ounces semisweet chocolate, roughly chopped
4 tablespoons unsalted butter
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract
1 package (12 ounces) semisweet chocolate chunks

Steps:

  • Preheat the oven to 350 degrees. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring between each,(takes about 60 secs) until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt. In mixing bowl, beat eggs, brown sugar, and vanilla on HIGH speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks. Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 minutes. Cool on baking sheets 6 minutes; transfer to a wire rack to cool completely.

Tips:

  • Prep Everything: Make sure you measure all ingredients, line your baking sheets with parchment paper, and preheat your oven before you start mixing the cookie dough.
  • Chill the Dough: Chilling the dough for at least 30 minutes will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Don't Overmix the Dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined. Use a large mixing spoon or spatula instead of a mixer to prevent overmixing.
  • Use a Cookie Scoop: A cookie scoop will help you get uniform-sized cookies. This will help them bake evenly.
  • Bake the Cookies in the Center of the Oven: This will ensure that they bake evenly.
  • Don't Overbake the Cookies: Overbaked cookies will be dry and crumbly. Bake them just until the edges are set and the centers are still slightly soft.
  • Let the Cookies Cool on the Baking Sheet: This will help them set and prevent them from breaking.

Conclusion:

These outrageous chocolate cookies are sure to be a hit with everyone who tries them. They're rich, chewy, and full of chocolate flavor. Plus, they're easy to make and can be customized to your liking. Try adding different mix-ins like nuts, dried fruit, or candy. You can also drizzle them with melted chocolate or frost them with your favorite frosting. No matter how you serve them, these cookies are sure to be a hit!
