Yield 1 (9") pie

Number Of Ingredients 16

For the crust:
11 (2 1/4x4 3/4") graham crackers
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
Pinch kosher salt
6 tablespoons unsalted butter, melted
For the filling:
1 (14-ounce) can sweetened condensed milk
4 large egg yolks
7 tablespoons fresh key lime juice
2 tablespoons fresh lemon juice
For the topping:
1 cup chilled heavy cream
2 tablespoons powdered sugar
Special Equipment:
A 9" pie pan

Steps:

  • Make the crust:
  • Place rack in the center of oven and preheat to 350°F.
  • Pulse graham crackers, sugar, cinnamon, and salt in a food processor until fine crumbs form. With the motor running, drizzle in melted butter and process until well-combined. Transfer mixture to pie pan and press into bottom and up sides with a flat-bottomed measuring cup.
  • Bake crust until golden brown and set, 8-10 minutes. Transfer to a wire rack and let cool to room temperature, about 15 minutes.
  • Make the filling and bake pie:
  • Whisk condensed milk and yolks together in a large bowl. Add key lime and lemon juice and whisk until well-combined (mixture will thicken slightly).
  • Pour filling into crust and bake until center is just set, about 15 minutes. Transfer pie to a wire rack and let cool completely (filling will set as it cools), about 1 hour. Transfer to refrigerator and chill until cold, at least 1 hour.
  • Make the topping:
  • When ready to serve, whip cream with a whisk or electric mixer to very soft peaks. Sprinkle sugar over cream and continue whipping until it holds stiff peaks. Dollop cream in center of pie (leaving at least a 1" border of visible pie filling) and serve.
  • Do Ahead
  • Pie (without topping) can be made, loosely covered, and chilled for up to 2 days.

KEY LIME PIE

Key Lime Pie image

This is the frozen key lime pie that ends up all over Jack Nicholson's face in the film adaptation of the novel "Heartburn," Nora Ephron's thinly veiled recounting of her disastrous marriage to Carl Bernstein. It is very easy to make, and the large amount of key lime juice guarantees a tart, impressive flavor. We recommend eating it, though, not using it as a weapon.

THE ULTIMATE KEY LIME PIE

The Ultimate Key Lime Pie image

Provided by David L. Sloan

Yield Makes 8 servings

Number Of Ingredients 16

For the graham cracker and cereal crust:
1 cup graham cracker crumbs from about 8 (2 1/4-inch by 4 3/4-inch) crackers
1 cup honey-nut cereal crumbs, such as crushed Honey Nut Cheerios
1/4 cup packed light brown sugar
7 tablespoons salted sweet cream butter, melted
1/2 teaspoon ground cardamom
For the filling:
6 large egg yolks
1 (14-ounce) can sweetened condensed milk
1 cup vanilla ice cream, softened
1/2 cup fresh or bottled Key lime juice
To serve:
1 cup heavy cream
3 tablespoons confectioners' sugar
Special Equipment
9-inch pie plate, nonstick vegetable-oil spray, stand mixer fitted with the whisk attachment

Steps:

  • Make the graham cracker and cereal crust:
  • Arrange a rack in the middle of the oven and preheat to 350°F.
  • Spray a 9-inch pie plate liberally with nonstick vegetable-oil spray.
  • In a medium bowl, stir together the graham cracker crumbs, honey-nut cereal crumbs, and brown sugar. Drizzle with the melted butter and stir until well combined. Press the mixture evenly onto the bottom and up the sides of the prepared pie plate and refrigerate for 30 minutes.
  • Make the filling:
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the egg yolks for 1 minute. Add the sweetened condensed milk and beat until pale and aerated, about 6 minutes. Add the ice cream and beat until smooth then add the lime juice and beat until combined. Pour the filling into the pie shell and bake until just set in the center, about 12 minutes. Transfer to a wire rack to cool completely then freeze until chilled through, at least 1 hour. DO AHEAD: The pie can be baked and kept in the freezer, well wrapped, up to 3 days.
  • Garnish and serve:
  • Remove the pie from the freezer and thaw in the refrigerator for 20 minutes prior to serving.
  • In a medium bowl, combine the heavy cream and sugar and whip until soft peaks form. Cut the pie into slices and top each with a dollop of whipped cream.

Tips:

  • Use fresh key limes: Fresh key limes have a more intense flavor than bottled or frozen lime juice. If you can't find key limes, you can substitute regular limes, but you may need to add more to get the same flavor.
  • Don't overbeat the egg yolks: Overbeating the egg yolks can make the filling curdle. Beat them just until they are thick and pale yellow.
  • Bake the pie in a water bath: Baking the pie in a water bath helps prevent the crust from cracking and the filling from curdling.
  • Chill the pie before serving: The pie needs to chill for at least 4 hours before serving, so plan ahead. This will allow the flavors to meld and the pie to set.
  • Garnish the pie with whipped cream or lime zest: Whipped cream or lime zest adds a delicious finishing touch to the pie.

Conclusion:

This key lime pie recipe is a classic for a reason. It's easy to make, has a delicious flavor, and is always a hit with guests. Whether you're making it for a special occasion or just because you have a craving for something sweet, this pie is sure to please.
