OSGOOD PIE

Yellow raisins and pecans. This makes a very tasty "hand pie." My mother used to make this when I was a kid. Eggs were 15 cents per dozen, butter 15 cents per pound. She considered this expensive, and only made this for special occasions--church socials etc. My mother never cut this pie smaller than quarters.

Time 1h15m

Number Of Ingredients 10

3 c sugar, granulated
2 Tbsp flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
3 stick butter, not margarine
5 eggs, whole
1 1/2 c pecans, chopped
1 1/2 c raisins, dark
2 pie shells, deep dish

Steps:

  • 1. Preheat oven to 300 degrees. Mix all ingredients together in order listed. Pour into both pie shells. Place uncooked pies on a cookie sheet.
  • 2. Bake until firm crust forms on their tops. (will not move when you slightly shake them). Bake about 65 minutes, but time may vary depending on your oven. Some take longer. I would start checking on it at about 40 minutes.

Tips:

  • For a flakier crust, use cold butter and work it into the flour quickly.
  • If you don't have a rolling pin, you can use a wine bottle or even a glass to roll out the dough.
  • To prevent the crust from shrinking, chill it for at least 30 minutes before baking.
  • If you are using a store-bought crust, be sure to pre-bake it according to the package directions.
  • For a custard filling, use fresh eggs and milk.
  • To prevent the custard from curdling, temper the eggs by slowly whisking them into the hot milk.
  • For a meringue topping, use stiff peaks of egg whites.
  • To prevent the meringue from weeping, add a pinch of cream of tartar.
  • Use fresh fruit for the filling, such as apples, blueberries, or strawberries.
  • For a glossy glaze, brush the top of the pie with milk or an egg wash before baking.

Conclusion:

Osgood pie is a delicious and versatile dessert that can be enjoyed by people of all ages. With its creamy filling, flaky crust, and sweet topping, it is sure to be a hit at any gathering. Whether you are making it for a special occasion or just for a weeknight treat, Osgood pie is sure to please.
