CREAMY ORZO WITH ASPARAGUS & PARMESAN RECIPE - (4.4/5)

Creamy Orzo with Asparagus & Parmesan Recipe - (4.4/5) image

Provided by wing118677

Number Of Ingredients 6

1 cup orzo
1 cup asparagus, cut into 1 inch pieces
1 tablespoon butter or margarine
1/4 to 1/2 cup cream
1/4 cup Parmesan cheese, grated
Salt & Pepper, to taste

Steps:

  • Bring a large sauce pan of water (filled about halfway) to a boil over medium heat. Cook the orzo until tender, about 10 minutes. After the orzo has been cooking for about 5 minutes, add the asparagus to the same pot (this will allow the orzo and asparagus to cook in the same pot and keep the clean-up to a minimum!). Once the orzo and asaparagus are cooked and tender, drain and return to the pot. Quickly add the parmesan cheese and butter. Stir thoroughly, allowing both the cheese and butter to melt. Slowly add the cream to the mixture, while stirring. Continue to stir and add cream until you reach your desired consistency. Season with salt and pepper. Voila! You have a delicious side dish! Serve immediately.

Lemony Orzo With Asparagus and Garlic Bread Crumbs image

Every spoonful of this pasta has a happy jumble of lemony orzo, grassy asparagus, garlicky bread crumbs, fresh herbs and salty Parmesan. The pasta and thinly sliced asparagus cook together in the same pot, then rest in a lemony dressing while the garlic bread crumbs are toasted, so the pasta has time to absorb as much flavor as possible.

TUNA & CAPER ORZO WITH PARSLEY

Tuna & caper orzo with parsley image

Use capers, orzo, chilli and cherry tomatoes to make tuna pasta more exciting - and you may already have tuna and capers in the storecupboard

Provided by Elena Silcock

Categories     Dinner, Lunch, Main course, Pasta

Time 25m

Number Of Ingredients 10

350g orzo
60ml olive oil , plus a drizzle for the rocket
2 garlic cloves , crushed
1 red chilli deseeded and finely chopped
4 tbsp capers , drained
1 small bunch parsley , finely chopped, a few leaves reserved to serve
270g pack cherry tomatoes , halved
200g can sustainably fished tuna in olive oil
1 lemon , juiced
rocket , to serve

Steps:

  • Bring a large pan of salted water to the boil and cook the orzo until al dente (about 1 min less than pack instructions). Drain and set aside, reserving some of the cooking water.
  • Meanwhile, heat the oil in a large pan over a medium heat, add the garlic and chilli, and sizzle for 2 mins. Add the orzo to the pan along with a spoonful of the cooking water, and stir well. Mix in the capers, parsley, tomatoes and tuna, flaking the fish with the back of a spoon. Cook for 2 mins or until everything is heated through, but not so long that the tomatoes become too soft.
  • Add the lemon juice (reserving 1 tsp for the dressing) and season well. Tip into bowls and top with the reserved parsley leaves. Toss the rocket with a drizzle of olive oil and the reserved lemon juice, and serve on the side.

Tips:

  • Use high-quality pasta. Orzo is a small, rice-shaped pasta that can be found in most grocery stores. Look for a brand that is made with durum wheat, which will give the pasta a better flavor and texture.
  • Cook the orzo according to the package directions. Be sure to salt the water before adding the pasta. This will help to enhance the flavor of the pasta.
  • Choose fresh, in-season vegetables. Asparagus, corn, and tomatoes are all great choices for this salad. If you can, buy them from a local farmer's market or grocery store.
  • Use a good quality tuna. Look for tuna that is packed in olive oil or water. Avoid tuna that is packed in vegetable oil, as it will have a less desirable flavor and texture.
  • Flake the tuna with a fork before adding it to the salad. This will help to distribute the tuna evenly throughout the salad.
  • Use a light dressing. A simple vinaigrette or lemon-herb dressing is a good choice for this salad. Avoid using a heavy dressing, as it will overpower the other flavors in the salad.
  • Serve the salad immediately. This salad is best served fresh. If you need to make it ahead of time, store it in the refrigerator for up to 2 hours.

Conclusion:

This orzo salad with tuna, corn, and asparagus is a delicious and easy-to-make dish that is perfect for a light lunch or dinner. It is also a great way to use up leftover tuna. With a few simple tips, you can make this salad even more flavorful and enjoyable.
