12 ounces chicken breasts, cut into bite-size pieces
1 1/4 cups uncooked orzo pasta
1 cup frozen green pea, thawed
1/2 cup grated asiago cheese
1/4 teaspoon salt
1/4 teaspoon dried basil or 1/4 teaspoon dried oregano
1/8 teaspoon black pepper

Steps:

2 teaspoons salt-free garlic seasoning blend
1 small onion, chopped
1 tablespoon olive oil
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup reduced-sodium chicken broth
3/4 cup uncooked orzo pasta
1 teaspoon Italian seasoning
1/8 teaspoon crushed red pepper flakes, optional
1/4 cup grated Parmesan cheese, optional

Steps:

  • Sprinkle chicken with garlic seasoning blend. In a large cast-iron or other heavy skillet, saute chicken and onion in oil until chicken is no longer pink, 5-6 minutes. 1 lb asparagus, chopped
1 (16 ounce) package orzo pasta, cooked and drained
3 cups diced cooked chicken
3 green onions, chopped
1 red bell pepper, chopped
2 tablespoons soy sauce
2 teaspoons hoisin sauce
1 (2 ounce) package slivered almonds, toasted
1/4 teaspoon fresh ginger, minced (or powdered)
1 garlic clove, minced
1 tablespoon sesame oil (or vegetable oil)
1 tablespoon sriracha sauce (careful, it's spicy!)

Steps:

  • Cook the garlic and ginger in the oil for 1-2 minutes.
  • Add the red peppers and asparagus, and sautee for 2-3 minutes.
  • Add the soy sauce, hoisin sauce, and sri racha; simmer for 5 minutes.
  • Stir in the orzo, chicken, and toasted almonds until well combined. Serve warm or chilled.
