1 green bell pepper - halved, seeded, and stem removed
1 red bell pepper - halved, seeded, and stem removed
1 yellow bell pepper - halved, seeded, and stem removed
1 tablespoon butter
2 tablespoons olive oil
3 green onions, sliced
4 cloves garlic, minced
2 skinless, boneless chicken breast halves, cut into 1/2-inch cubes
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 cup orzo
1 (16 ounce) can chicken broth
3 tablespoons Parmesan cheese
1 teaspoon olive oil
1 teaspoon butter
2 portobello mushrooms, thinly sliced

Steps:

1 cup uncooked orzo pasta
1 pound bulk Italian sausage
1/2 cup chopped red onion

2 zucchini, grated
1/2 cup chopped fresh mint leaves
1/2 cup grated Pecorino Romano, plus more for sprinkling
1/4 cup extra-virgin olive oil
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 cups chicken broth
1 1/2 cups orzo (rice-shaped pasta)
6 sweet bell peppers (red or yellow)

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour the tomatoes into a large bowl and break apart using a pair of kitchen shears or your finger tips. Add the zucchini, mint, cheese, olive oil, garlic, salt, and pepper. Stir to combine.

1/3 cup onion, chopped
8 ounces stewed tomatoes
1/3 cup orzo pasta

4 yellow bell peppers (may sub orange and or or red)
1/2 cup whole-wheat orzo pasta (may use regular orzo)
1 (15 ounce) can chickpeas, rinsed
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
6 ounces Baby Spinach, coarsely chopped
1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
3/4 cup crumbled feta cheese, divided
1/4 cup chopped sun-dried tomato (not oil-packed)
1 tablespoon sherry wine vinegar (may sub red-wine vinegar)
1/4 teaspoon salt

Steps:
