Steps:
- Bring a large pan of salted water to the boil and cook the orzo until al dente (about 1 min less than pack instructions). Drain and set aside, reserving some of the cooking water.
- Meanwhile, heat the oil in a large pan over a medium heat, add the garlic and chilli, and sizzle for 2 mins. Add the orzo to the pan along with a spoonful of the cooking water, and stir well. Mix in the capers, parsley, tomatoes and tuna, flaking the fish with the back of a spoon. Cook for 2 mins or until everything is heated through, but not so long that the tomatoes become too soft.
- Add the lemon juice (reserving 1 tsp for the dressing) and season well. Tip into bowls and top with the reserved parsley leaves. Toss the rocket with a drizzle of olive oil and the reserved lemon juice, and serve on the side.

Tips:
- Choose the right pasta: Orzo is a small, rice-shaped pasta that cooks quickly and is perfect for salads. You can also use other small pasta shapes, such as penne or orecchiette.
- Use canned tuna: Canned tuna is a convenient and affordable way to add protein to your salad. Look for tuna that is packed in water, not oil. You can also use fresh tuna, but it will need to be cooked before adding it to the salad.
- Chop the vegetables finely: This will help them to blend in with the other ingredients and make the salad more cohesive. You can use a sharp knife or a food processor to chop the vegetables.
- Use a light dressing: A light dressing will help to keep the salad from becoming too heavy. You can use a simple vinaigrette, or you can add some herbs or spices to taste.
- Serve the salad immediately: Orzo salad is best served immediately after it is made. The pasta will start to absorb the dressing and become mushy if it sits for too long.
Conclusion:
Orzo and tuna salad is a delicious and refreshing salad that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect orzo and tuna salad that everyone will love.
